Zucchini apple frittata

Google: “Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables. The word frittata is Italian and roughly translates to “fried”.”

To me a frittata is an egg-bake filled with yummy vegetables, herbs, and a bit of cheese. If you’re not a savoury breakfast person, then make it a quick weeknight dinner or just brunch like me. Regrettably, vegetables are extremely expensive and there are shortages here. It’s probably due to importing, war, drought, flooded or whatever natural disaster.

It did not stop me from making a simple frittata with what I can get at the supermarket. I have green apple, eggs, thickened cream, onion, zucchini, dried oregano, Italian seasoning, goat cheese and Parmesan cheese. Let’s taste and see that my simple frittata is comforting, and budget meal that is delicious. Let’s cook and be thankful that I can have dinner on the table.

Ingredients

5 eggs, large
2 green apples, cored, shredded
2 small zucchini, shredded, squeeze dry
1 small onion, chopped
125 ml thickened cream
110 g goat cheese, crumbled
65 ml olive oil, divided
3-4 Tbs chili flakes, divided
1 Tbs minced garlic
1 Tbs salt
1 Tbs oregano
1 Tbs Italian seasoning
Parmesan cheese
pepper (OPT)

Method

Preheat 180 degrees C. Grease the frittata baking dish. Use shredded blade to shred apple and set aside. Next shred zucchini, and squeeze dry with paper towels. Cook garlic and onion in 2 Tbs oil in saucepan until soft and on low heat. Beat thickened cream and egg lightly to incorporate.

In a frittata baking dish, scatter shredded apples with remaining oil, zucchini, garlic mixture, salt, 2 Tbs chili flakes, oregano, Italian seasoning, pepper and goat cheese. Pour the thickened cream mixture over the top. Then scatter Parmesan over the top. Bake for about 35-45 minutes until firm and golden brown. Switch off oven and leave in oven for 15 minutes. Remove from oven onto rack to cool further 5 minutes and scatter the remaining chili flakes. Serve with a glass of white wine. Enjoy!!!
