Felt like having pizza today. Bought pizza base, kale, pumpkin cubes and I jump for joy finally I managed to get this hot Italian sausages on sale. Most of the time, it’s hard to get them in my supermarket. Mostly they sell chorizo, and kabana. I didn’t make pizza base as I don’t have the strength to knead nor the time to wait for the dough to double.
It’s a cheat quick and easy made when I have all the ingredients ready. Trying out my new pizza tray. The sauce that I spread is tomato paste. Par cook the pumpkin cubes until slightly tender. Brown the sausages slightly before cutting into slices.
My pizza is colourful, delicious and comforting to eat. Let’s assemble the ingredients and bake it!!!
1 bought pizza base
1 tub of tomato paste
180 g pumpkin cubes
2 hot Italian sausages
1 small onion, thinly sliced
2-4 kale leaves, tear up to bite size
chili flakes (OPT)
Preheat oven 230 degrees C. Place the pizza tray in the oven for about 20 minutes. Meantime in a pot par boil pumpkin with salt, pepper and oil for about 12-15 minutes until slightly tender. In the last 6 minutes add kale leave into boiling water, just blanch and soften a bit. Drain and set aside.
Next heat a saucepan on medium heat and drizzle a few drop of oil. Then cook sausages until all sides are brown. Remove and set to drip dry on paper towel before cutting into slices.
Open the pizza base plastic, lay pizza base on a clean benchtop. Spread tomato paste over it. Next place kale, some onion, followed by pumpkin cubes, sausages, and the remaining onion. Top with chili flakes, Parmesan, Pecorino, Mozzarella. Drizzle some oil, salt and pepper.
Remove the hot pizza tray, be careful it’s very hot, I put in on another tray, then lifted the pizza base with ingredients onto the hot pizza tray. Place pizza on the middle rack. Bake for 15-17 minutes or until the pizza is golden brown. Remove from oven and use the pizza cutter cut to bite size and eat it with a cool beer. Enjoy!!!
Note: You can put any ingredients of your choices. You can use peperoni, salami or diced ham. The vegetables can be carrot, or spinach. You can add fish or minced beef. You can add pineapple too.
