Purple cauliflower rice

I found purple cauliflower at the supermarket again, since I have made it with black rice. I decided to make this purple cauliflower as rice. This is my second time making use of cauliflower as rice. For this rice, I have added broccolini and carrot for colouring and healthy meal.

1 small head purple cauliflower, stems cut into bite size and florets
1 small carrot, cut into bite size
1 bunch broccolini, cut into bite size
1/8 onion, finely chopped
2 Tbs butter
1 Tbs minced garlic
1 Tbs lemon juice
Italian seasoning
black pepper


Place onion in food processor pulse till fine, and remove to a bowl; set aside. Then cauliflower florets and stems in food processor, work in batches and pulse until fine small bits about 2-3 minutes. Set aside for later.

Heat the pan with oil on medium heat. Stir in garlic and onion for about 30 seconds. Add carrot, broccolini, Italian seasoning, cook for 2 minutes. Then cauliflower rice, salt and black pepper. Cook stirring every once and a while until cauliflower crisp tender and carrot and broccolini also tender and cooked about 5-7 minutes.

Remove from hob stir in lemon juice. Taste and adjust the seasoning or lemon juice. Spoon onto plate and drizzle some oil. Serve immediately and enjoy with a glass of red wine.
