Pumpkin and green beans frittata

Here’s a meal for one. You can make this simple meal in under 30 minutes. This can be healthy as you have vegetables in it. If you are celebrating New Year alone like me this year as its too hot to be BBQ with family and friends.

I like to be home alone and still I can celebrate New Year 2020 with all the leftovers and have some thing simple no hassle in cooking in the heat too long.

I know its a bit char as my oven are old the temperature vary. But at least I have something to eat and publish. Let’s cook!!!

Ingredients

150 g cubed pumpkin
6 green beans, cut to bite size
1 egg
4 Tbs thickened cream
1/4 c tasty cheese
salt
pepper
water to boil vegetables in microwave
butter to grease 

Method

Preheat oven to 200°C. Lightly grease a small quiche dish with butter. Place pumpkin and beans in microwave container; microwave vegetables about 7 minutes until tender.

Then arrange vegetables in a single layer, over prepared dish. Whisk egg and cream in a bowl. Gently pour egg mixture over vegetable mixture. Sprinkle with cheese. Bake for 20 -30 minutes or until egg mixture is set and top golden. Stand for 5 minutes. Serve with a glass of Chardonnay.

Note: you can use any vegetables of your choice. So too the cheeses. Oven temperature vary. You might need less or more time.
