Since my last entrée for New Year 2021. Everybody enjoyed it. So, I made a different one with Angelina plumps from my garden. Bought some blueberries, cherries and grapes to add in with leftover mortadella and biscuits.
My entrée: oval cheese is made of mascarpone and spreading cheese with sundried capsicums, craisins, spinach and pepitas. That’s the last mascarpone I use.
Guess, I could call it healthy as there are 4 types of fruits in it. We had it at the end of dinner this time. Serve it with dessert wine. Let’s eat!!!
Ingredients
250 g mascarpone cheese
250 g spreading cheese
180 g baby spinach
130 g craisins, cut into tiny bits
130 g sundried capsicums in oil, cut into tiny bits
9 Angelina plumps
18 blueberries
8 cherries
8 mortadella
1 small bunch of grapes
3 Tsp pepitas
Ritz biscuits
Marie biscuits
salt
pepper
Method
Line an oval bowl with cling wrap hangover all the sides about 4”, press in touching the bottom and sides. Sprinkle pepitas at the bottom. Blanch baby spinach in hot boiling water for about 3-5 minutes. Drain dry and then chopped finely. Set aside.
In a mixing bowl, add mascarpone and spreading cheese and beat till creamy and smooth. Next add craisins and sundried capsicums with 3 Tsp oil. Season with salt and pepper. Mix everything well and transfer one ladle spoon cream mixture to the prepared bowl.
Top with half blanched spinach. Then another ladle of cream mixture on top. Close top with the hangovers cling wrap. Place in fridge overnight. Before serving, put blueberries onto a serving dish. Wash plumps, grapes and cherries and dry them.
Arrange it on a serving plate. In front is blueberries in serving dish, Ritz biscuits, Marie biscuits, mortadella, and cherries with grapes. Place plumps on top next to cheese spread. Opps! forgot to put the cheese knife. Enjoy!!!
Note: Have the remaining cheese mixture in another bowl or dish with double cling wrap in fridge. The untouched cheese spread can be kept in freezer for a month. Do not let it get wet.
The remaining biscuits, cherries, grapes, blueberries and more mortadella set aside to refill the serving plate. You might want to add your own choice of cheese platter. Be creative add colours to your entrée and healthy fruits.
