Baked brie with dates and garlic onion oil

Saw on a TV cooking program on how to baked brie with honey, maple syrup, jams (fig or apricot), and dried cranberries. I wanted to make it my own so, I change fig or apricot and dried cranberries to roughly chopped pitted dates. This is my trial and error.

“Pitted dates are whole dates with the central seed removed, making them convenient for snacking, baking, or smoothies. I am glad to try out. I know my picture doesn’t looks pretty but it’s yummy and healthy. Let’s taste and see for myself!!!

Ingredients

For the Brie

1 round wheel of Brie cheese (approx. 200g – 250g)
6 pitted dates, roughly chopped

For the Garlic & Onion Oil

2 Tbs oil
2 Tsp minced garlic
2 Tsp minced onion
sea salt
black peper

Method

Preheat your oven to 180°C. I place my brie on double layer of baking paper in a baking tray; leaving side extra longer for easy to lift out later. You can place your wheel of brie into a small, oven-safe baking dish or a dedicated brie baker. Using a sharp knife, score the top rind of the cheese in a shallow criss-cross pattern to help the flavors soak in.

In a small bowl, combine oil, minced garlic, and onion with a pinch of salt and pepper. If you would like a stronger flavour. Then place in the microwave and cover with a plate as oil will splatter; to gently warm the oil and garlic mixture at interval 20-30 seconds for about 1-2 minutes.

Place the chopped dates evenly over the scored brie. Pour the garlic onion oil all over the top, letting it settle into the cracks. Bake uncovered in the oven for 12 to 15 minutes, or until the center of the brie feels soft and begins to ooze when lightly pressed.

Remove from the oven, let it rest for 2-3 minutes, and serve immediately alongside warm baguette slices or crackers. Enjoy!!!
