Zucchini asparagus carrot pizza

Found pizza base on sale. Bought it and decided to add in zucchini from my sister’s friend and some carrot leftovers. In my pantry I found a tub of tomato paste and some mozzarella cheese in my freezer. My trial and error using bought pizza base. I forgot to par boiled my asparagus, zucchini and had cooked my pizza too long.

Google: “The dough is par-baked and the sauce and cheese are added raw, to be cooked in the oven. Most brands ask you to preheat the oven to 400°F or 425°F and bake the pizza for 10 to 15 minutes.”

Learned my lesson; I must remember to parboil hard vegetables first before putting them on top of the bought pizza base. Glad it still tastes good, though it doesn’t look pretty. Let’s make store bought pizza!!!

Ingredients

1 store bought pizza base, set to room temperature
2 bunches asparagus, stems removed and cut about 1 inch long
half zucchini or 1 zucchini, depends on size of pizza base, sliced
2 small carrots, slices
tomato paste
mozzarella cheese
chili flakes

Method

Preheat oven to 230 degrees C. Spread tomato paste onto the pizza base. Filled with zucchini, carrots and asparagus. Then top with mozzarella. Place it in the preheated oven for 25-30 minutes until vegetables ar tender and cooked.

Bring out carefully from oven, scatter chilli flakes all around. Enjoy with a cold beer.
