My favourite meal for one is shin ram yun noodles soup. It’s a quick, simple and easy to cook. This is my lazy meal or just don’t feel like spending too long in the kitchen. I have leftover minced pork broccoli egg and decided to add it in to clear my fridge. I have written down the recipe for minced pork broccoli egg for you.
All you needed is microwave, hot boiling water and addition ingredients to go with this noddle. You can make it a hearty dinner with your addition ingredients. As usual I love adding some colour to my meal. With freezing cold Winter and heavy rain, having noodles helps keep me warm.

1 packet shin ram yun
leftover mesclun (OPT)
Minced pork broccoli egg
500 g minced pork
3 eggs, lightly beaten
2 small broccoli, florets and stems thinly slice
1 Tbs minced garlic
1 Tbs oyster sauce
1 Tbs soy sauce
1 Tbs Shao Xing cooking wine (OPT)
For you, you have to cook the minced pork broccoli egg. I have leftover, I add to my noodle and warm it as I cook my noodle in the microwave. You can cook your noodle in a pot of boiling water. You can cook more noodle as the minced pork broccoli egg are enough for 4 to 6 people.
To cook minced pork broccoli egg
Heat oil in saucepan on medium heat. Add garlic and cook for about 1 minute. Then add minced pork, toss around and cook until all brown about 4-5 minutes. Now add in oyster and soy sauces, mix well into minced pork. Next add in the broccoli stems cook for about 2 minutes.
Now add in broccoli florets cook and toss around until tender. Add in Shao Xing cooking wine, mix well to incorporate. Pour in the lightly beaten eggs, salt and pepper and cook for about 2-3 minutes and mix well. Check the seasoning. Once eggs are cooked, off the hob and spoon on to serving plate. Keep warm. Then cook your noodles as per instruction. Then add the cook minced pork broccoli egg over your noodles soup.
The microwave method and using leftover
Put kettle on. Open the packet of shin ram yun noodles and put in a bowl with the condiments that come with it. Pour the hot boiling water over the noodles. I have leftover so I put my leftover minced pork broccoli egg and salad into the noodles bowl and microwave twice. The first-time heat for 3 minutes 40 seconds and then gives a couple of stir and reheat further 2 minutes 40 seconds until noodles are soft and leftover are warmed up. Bring out of microwave and enjoy it with a glass of white wine.
