Fried tofu with tapioca flour and spices

Felt like having tofu. Went to get one box of 300 g firm tofu. Then search recipes using tapioca flour to fry tofu. I regret using the recipe that only use 1.5 Tablespoons tapioca flour. It’s not enough to coat. It’s not crispy and golden brown and there are few white spots not covered by tapioca flour and spieces.

“Firm tofu is a dense, pressed soy product made from curdled soy milk. Because more water is pressed out than in silken or medium varieties, it holds its shape well when sliced, cubed, or stir-fried. It is a highly versatile, nutrient-dense ingredient that absorbs marinades easily. A half-cup of firm tofu contains around 22 grams of protein and provides all nine essential amino acids. Being cholesterol-free and low in saturated fats, it can help lower LDL (bad) cholesterol and reduce heart disease risk. When prepared with calcium sulfate, firm tofu becomes a rich source of bone-building calcium.”

Felt a bit disappointed for using so little tapioca flour. Learned my lesson. Anyway, I got my craving for tofu to eat with rice, meat and vegetables. Let’s cook!!!

Ingredients

350g firm tofu
1 1/2 Tbs tapioca flour
1 Tsp garlic powder
1/2 Tsp nutmeg powder
1/2 Tsp 5 spice powder
1/2 Tsp ginger powder
salt
pepper

Method

Wrap the block of tofu in triple layers ofpaper towels and press. Place a heavy object (like a saucepan or a plate with some fruits as weights) on top for 10-15 minutes to squeeze out excess liquid. Cut the tofu into bite-sized slightly thick square.

In a metal deep plate, toss the bite-sized gently with garlic powder, ginger powder, nutmeg powder, 5 spice powder, tapioca flour, salt, and pepper. Let the tofu sit in flour mixture for 5 minutes so the flour mixture absorbs surface moisture and sticks better to tofu.

Heat enough oil about 1 inch high in saucepan on medium heat. Place 5 cut square tofu at a time; in a single layer so it doesn’t overcrowd. Turning tofu all around about 4-7 minutes each till golden brown. Use tong to pick up cook tofu and drain on paper towel plate. Repeat till all tofu are cooked and golden brown.

Switch off heat and move the pan away to cool oil. Save the oil in a container for cooking another dish. Serve fried tofu with rice, meat, and vegetables. Have it with chili sauce and beer. Enjoy!!!!
