Mushrooms and vegetables pan mee soup

Lazy dinner today, not in the mood to cook but have to eat something. Using instant pan mee soup with choy sum and shiitake mushroom. I normally have instant noodle at lunch time but tonight is noodle.

Rationing my food due to lockdown and trying not to go out often. At least I have noodle to eat than nothing at all. This is simple quick easy comforting meal during lockdown and cold raining day in winter. Let’s cook!!!


1 packet instant pan mee, mushroom flavoured
1/2 bunch choy sum, wash, dry and cut into bite size
5 shiitake mushrooms, cut to bite size
boiling water
sesame oil (OPT)


Bring kettle to boil. In a bowl add shiitake mushrooms fill with hot boiling water from the flask. Open the instant packet noodle and put in bowl with the condiments. Cut the choy sum, place in a separate bowl and fill with hot boiling water from kettle when it’s boil. Microwave choy sum for 5 minutes. Drain and place it in the bowl with noodle and drain shiitake mushrooms, squeeze dry and cut into bite size.

Add to the bowl with noodle and vegetables. Pour the hot boiling water enough to cover the noodle. Microwave on high for 3-4 minutes until noodle, shiitake mushrooms and vegetables soften. Gives a couple of stirs, add in sesame oil and microwave again for 3 minutes. Serve with a glass of white wine. Enjoy!!!!
