Prawns and vegetables soupy pasta

Felt like having soup and pasta today. Got about 35 g diced pork in freezer which is not enough so added some prawns to make the soup. Found this new range pasta called tubular. Looks like ziti, rigatoni and cannelloni. Couldn’t resist to try it so bought it to try.

Google: “Tubular pasta is any pasta that is hollow through the center, forming a tube. They are often served with a heavy sauce, which holds well in the hollows of the pasta tubes. Tubular pasta is also used in salads and casseroles”.

With leftover carrots, spring onions and leek, I added in to make my vegetables stock more fragrant. Let’s combined soup and pasta, I am a fan of soupy meal especially in Winter. Glad to use tubular instead of Shin rum yun noodles. This is simple, hearty, comforting and delicious. Let’s cook!!!!

Ingredient

200 g prawns, removed shells, deveined, washed
200 g tubular pasta
35 g diced pork
2 carrots, cut to bite size
2 Spring onion stalk, removed stems and cut into bite size
1 leek, washed, cut
4 c vegetables stock
1 cubed vegetables stock (OPT)
1 Tbs garlic minced
salt
black pepper
water
oil

Garnish

Dried shallots
XO chili sauce (given by friend)

Method

In a microwave safe bowl, add tubular and water with a pinch of salt. Microwave for about 12 minutes just until slightly softened. Drain and set aside until needed.

In a pot, on medium high heat, heat 2 Tbs oil for about 1 minute. Add garlic cook for 15 seconds, then reduce heat to medium low. Now add diced pork, cook for about 5-7 minutes until tender. Add carrots cook a further 5-7 minutes. Add leek, cook for about 5 minutes until soften.

Add stock, cubed stock and another 1-2 Tbs oil, stir to mix well and bring to a boil. Then lower heat to low and simmer, stir once or twice with lid on for about 20 minutes. Now add the tubular and prawns into the pot, stir to mix well and cook for about 5-7 minutes.

Checking the seasoning, tubular are warm up and prawns are cooked through. Then add in spring onions cook for 1-2 minutes. Spoon onto bowls, add in dried shallots and Xo chilli sauce. Enjoy!!!!
