Helen’s trifle

Dessert for one

Google: “Trifle is a dessert found in British and other cuisines. Made with fruit, a thin layer of sponge fingers commonly soaked in sherry or another fortified wine, and custard, the contents of a trifle are highly variable; many varieties exist, some forgoing fruit entirely and instead using other ingredients, such as chocolate, coffee or vanilla”.

“The fruit and sponge layers may be suspended in fruit-flavoured jelly, and these ingredients are usually arranged to produce three or four layers. The assembled dessert can be topped with whipped cream”.

Felt like having trifle. Got a box of custard, a punnet of strawberries and leftover a handful of blueberries, and four pieces of leftover berries orange tahini yoghurt cake. I decided to make trifle. I know trifle is usually serve during Christmas time. It’s delicious, comforting and enjoyable to eat during lockdown and winter day. Let’s make it and sit by the fireplace to keep warm!!!!

Ingredients

4 pieces of leftover berries orange tahini yoghurt cake, cut into bitesize
5-8 Tbs custard
6 Tbs extra strong coffee
1/8 c water
1 mini orange, peeled, seeded and cut into bite size
200 g strawberries, divide
a handful blueberries
strawberry whipping cream
chocolate sprinkles

Method

Put kettle on. Put 2 Tbs instant coffee powder in a mug. Once water boiled, pour into mug and stir. Let sit to cool slightly. Meantime, remove stems and cut 5 strawberries into bite size and add to nutri bullet along with blueberries and water.

Blitz until puree and set aside. Remove stems and cut the remaining strawberries into slices and peel and cut orange into bite size. Cut the leftover cake into bite size, put into glass in a layer. Then pour 2 Tbs coffee over it. Next line strawberries slices around the glass and with some slices in the middle on top of cake.

Spoon some puree over the strawberries. Put some cut oranges followed but chocolate sprinkle and then another layer of cake. Pour another 2 Tbs coffee over, followed by strawberries on the top of cake and some oranges. Then custard over.

Then another layer of cake, then strawberries, followed by puree. Next spray whipping cream and sprinkle chocolate over the top. Enjoy!!!!

Note: You can use any sponge cake or any leftover cake you bake. If you like you can try baking my Berries orange tahini yoghurt cake. You can layer with any fruits of your choice, make jelly instead of puree strawberries/blueberries.
