Turkey and vegetables in tom yum sauce

While clearing my freezer, I found a small packet of turkey meat left since December. Decided to cook it with carrots and peas and use up red onion left in the pantry.

Thawed the turkey meat and peas, while continuing clearing freezer and fridge. In my fridge I have leftovers berries puree and a handful blueberries. Think I will make a dessert to go with this turkey and vegetables.

All sorted out, now I can cook rice, followed by cooking turkey as it had thawed. Then prepare the ingredients for dessert. Anyway, my meal turkey and vegetables are colourful, flavourful and delicious. Let’s cook!!!


300 g turkey breast, diced
2 small carrots, julienne
1/2 red onion, sliced
6 Tbs tom yum paste
1 Tbs garlic minced
1-2 Tsp sugar (OPT)
a handful of peas


Heat oil in sauce pan on high heat, add garlic cook until fragrant about 1 minute. Add onion, cook until translucent about 2 minutes. Next add carrots cook until softened about 5-7 minutes. Then add diced turkey cooked for 4 minutes until cooked through and lightly browned.

Add peas, tom yum paste and sugar with some water for sauce; cook for about 4 minutes. Stir to combine well. Season with salt and pepper. Toss to coat well. Once sauce has thickened, turn off hob. Spoon on to deep plate. Serve with cooked rice and a cold beer. Enjoy!!!
