Got watermelon that are going to go off. I thought of making watermelon panna cotta, but I run out of sour cream. So, I changed it to mousse.
This trial and error. But worth to try. I just dump everything that I can get in my pantry and fridge. I have leftover apple pie so I added it as garnish. I have included the Apple pie link at the bottom. If you like to try. It did turn out well delicious. Let’s make it.
Ingredients
8-10 pieces watermelon, deseed
1 Tsp lime juice
5 Tbs yoghurt
3 Tbs water
2 Tsp gelatine
1/4 c water (tap)
1/4 Tsp nutmeg powder
Whipping cream (Bought)
molasses (Bought)
pinch of cardamom
Garnish
Watermelon pieces
Apple pie pieces
Method
Put 1/4 cup water in a bowl and sprinkle gelatine over the water, stir gently and set aside for about 10 minutes. In a blender, add watermelon, lime juice, yoghurt, 3 Tbs water, cardamom, nutmeg and blend to mix well.
Put gelatine mixture in microwave heat for 30 seconds stir to make sure gelatine melted. Add gelatine and squirt a bit of molasses to watermelon puree and mix with a metal spoon. Squirt some whipping cream into the mixture and mix well again.
Spoon mousse into glasses. Put in the fridge to set about 8 hours or overnight. Next day before serving place a piece of apple pie followed by a piece of watermelon to garnish. Serve chill. Enjoy!!!!
