Apple pie

It has been ages since I had have apple pie. My sister gave me Granny Smith apples a few day ago. I decided to make it without pastry but with crispy crust on top. What I am looking for is that it’s delicious and worth making it.

Well, I love to experiment and create my own version of apple pie. This is trial and error make perfect and satisfying to eat. Nothing fancy just the basic ingredients that I throw it in to make the crispy crust. Also, I must have chili powder and cayenne in it. I am a chili lover. You don’t have too.

My apple pie is delicious, not too sweet and indeed turned out just as I wanted. I am glad that my family enjoyed it. Let’s bake!!!

Ingredients

2 big Granny Smith and 1 small standard, cored and cut thick pieces
1 Tbs lime juice
1 Tbs corn flour
3/4 Tsp cinnamon, divide
1/2 Tsp chili powder (OPT)
1/4 Tsp cayenne (OPT)
1/4Tsp nutmeg
80 g sugar

Crispy crust

200 g plain flour
200 ml pouring custard
40 ml milk
150 g cold butter, cut small cubes
120 sugar
2 Tsp baking powder
1 Tsp vanilla extract
1/2 Tsp bicarb soda
1/2 Tsp salt

Golden brown crispy crust

15 g light brown sugar, sprinkle
Sprinkle chili powder (OPT)

Method

Preheat oven 190 degrees C. Grease the baking dish with butter and set aside. Put apple pieces in a bowl mix well with lime juice then pour into the baking dish and set aside. In a deep plate mix well 80 g sugar, cinnamon, corn flour, chili powder, cayenne and nutmeg. Then add into the apple toss to coat evenly. Next pour the apples mixture into the baking dish and place in fridge.

Meantime put flour, 120 g sugar, bicarb, baking powder, salt in bowl mix well. Add the cubes cold butter mix and gently blend in with flour mixture for a bread crumb texture. Then make a well in the centre, add custard, milk,  and vanilla. Mix well with a wooden spoon until combined. Bring out apple pie dish to room temperature.

Use a big metal spoon, spoon the crispy crust over the apple, like a layer of blanket. Next sprinkle brown sugar and chili powder over the crispy crust blanket. Bake for 45 minutes until crispy crust is golden brown.

Switch off oven, open the door a bit and place a wooden spoon in between. Leave apple pit baking dish in oven for 15 minutes before removing from oven and let’s cool for about 5 minutes. Spoon onto bowl serve with custard or thickened cream or ice cream. Enjoy!!!!
