New Year fruits and vegetables entrée

2020 had brought so much chaos and fear that most of us loose Hope to turn the page and leap in confident towards 2021. Are we going to be intimidated by chaos and pandemic 2020? It’s in the past, leave it behind be thankful that we came through-Praise God.

To be more productive we are to trust God, allow Him to work in and through us and we can see how it impacts us on an ongoing basis so that we can adjust in our lives to move forwards with Love, Peace, Joy and Hope in 2021. We can make a big change but make that change of Trusting God a top priority.

You ask how trusting God adjustment will make my life better? The answer is instead of trying to focus on self-sufficiency or fixing what’s wrong, practice focusing on mindfulness and awareness of God abiding Presence: He is our refuge and strength, and an ever-present Help in trouble.

Everybody New Year Resolution is cutting down junk food. Big change in life and many more. My New Year resolution is eating, creating, exploring and sharing my recipes with a willingness to change daily and Trusting God’s help.

My entrée: cheese dome is made of mascarpone and spreading cheese with sundried capsicums, craisins, spinach and sesame seeds. Serve it with biscuits, grapes, cherries, black and green olives, and mortadella. Move towards New Year 2021 with budget, colourful, delicious, healthy, happy and wiser Trusting God.

Ingredients

250 g mascarpone cheese
250 g spreading cheese
180 g baby spinach
130 g craisins, cut into tiny bits
130 g sundried capsicums in oil, cut into tiny bits
12 dried apricots
11 whole green olives
11 cherries
10 mortadella
6 black olives, sliced
1 small bunch of grapes
3 Tsp sesame seeds
Ritz biscuits
Marie biscuits
salt
pepper

Method

Line a round bowl with cling wrap hangover all the sides about 4”, press in touching the bottom and sides. Sprinkle sesame seeds at the bottom. Blanch baby spinach in hot boiling water for about 3-5 minutes. Drain dry and then chopped finely. Set aside.

In a mixing bowl, add mascarpone and spreading cheese and beat till creamy and smooth. Next add craisins and sundried capsicums with 3 Tsp oil. Season with salt and pepper. Mix everything well and transfer one ladle spoon cream mixture to the prepared bowl.

Top with half blanched spinach. Then another ladle of cream mixture on top. Close top with the hangovers cling wrap. Place in fridge overnight. Before serving, spoon green olives onto a serving dish followed by black olives and apricots into serving dishes. Wash grapes and cherries and dry them.

Arrange it on a board or a plate. In front is grapes, Ritz biscuits, Marie biscuits, apricots, cherries, mortadella, and both olives serving dish. Place the cheese knife on top of mortadella.

Note: Have the remaining cheese mixture in another bowl or dish with double cling wrap in fridge. The untouched cheese dome can be kept in freezer for a month. Do not let it get wet.

The remaining biscuits, cherries, grapes, apricots, both olives and more mortadella set aside to refill the board. You might want to add your own choice of cheese platter. Be creative add colours to your entrée and healthy fruits.
