
Here’s my simple breakfast to finish off the last egg and bacon. “Egg and bacon is a classic, high-protein breakfast combination consisting of cooked eggs (fried, scrambled, or poached) served alongside strips of cured pork bacon.”

Ingredients
1 egg
1 round sliced bacon
1 sliced of bread
1 Tbs oil
butter to spread
salt
black pepper
Method
Cook the round sliced bacon and toast the bread
Place a slice of bread into toaster to toast. Once it done, butter the bread and cut into 3 sections. Plate up and set aside. Next heat the saucepan over medium heat. Add the round bacon sliced to the pan along with 1 to 2 tablespoons of water. This keeps the lean meat from drying out.
Cook for about 2 to 3 minutes until the water evaporates and the bottom browns slightly. Flip the bacon and cook for another 1 minute until it is heated through. Do not overcook it, or it will become tough when cold. Place the cooked bacon on a plate lined with paper towels to drain any excess moisture. Let it cool completely at room temperature.
Cook the egg
Using the same saucepan earlier to cook bacon, heat the saucepan over medium-high heat with 1 Tbs oil. Crack the egg gently into the hot pan. Season with salt and pepper. Add a splash of water to the pan. Cover the pan immediately with a lid to trap the steam. Cook on low for about 2 to 3 minutes until the whites are no longer slimy. The yolk is runny.
Assemble
Place the cool bacon on top in between the 2 cut up buttered toast. Next carefully place the egg on top of the bacon. Enjoy with a hot cup of coffee!!!
Note: you can add salad if you like. Or cut some cucumber and cherry tomatoes.
