Angel hair pasta sausage with vegetables

Angel hair typically refers to angel hair pasta (also called capellini), an extremely thin Italian pasta in long strands, much finer than spaghetti. It is low in fat, cholesterol-free, and provides quick-release carbohydrates for energy, but as a refined, low-fiber pasta it can raise blood sugar rapidly.

“Sausage is a prepared meat product made from ground or minced meat—such as pork, beef, or chicken—mixed with fat, spices, salt, and fillers, then packed into a cylindrical casing. It provides complete protein for building and repairing muscle tissue and supplies high amounts of iron and zinc for red blood cell and immune health. It is rich in Vitamin B12 and other B-complex vitamins that support energy production and nerve function. Most commercial sausages are processed and high in sodium and saturated fats, so they should be eaten in moderation; choosing high-meat-content options, lean poultry, or lower-sodium varieties can reduce health risks.”

Ingredients

225g angel hair pasta
8 herbs flavoured sausage, prick holes all around
1 medium head of broccoli, cut into small florets
1 small leek, cleaned and sliced
200 g cherry tomatoes (halved)
5-7 Tbs of water
2-3 Tbs minced garlic
2 Tbs oil
1 Tsp oregano
Salt
black pepper
1/2 cup grated Parmesan cheese (OPT)
Reserved pasta water, about 1/2 cup

Method

Bring a large pot of heavily salted water to a boil. Heat 2 Tbs oil in the saucepan over medium-high heat. Add the sausages and oregano. Cook until browned and fully cooked through, then remove it with a slotted spoon and set aside on a plate.

In the same saucepan with the leftover sausage oils, add the remaining 1 Tbs oil, turn the heat to medium. Stir in the minced garlic and cook for 30 seconds until fragrant. Add the sliced leeks and cook for 3–4 minutes until soft.

Now add the broccoli florets and halved cherry tomatoes to the pan. Splash in a 5 Tbs of water, cover the saucepan with a lid, and let it simmer for 4–5 minutes until the broccoli is tender and the tomatoes burst into a rich, rustic sauce.

Drop the angel hair pasta into your boiling water. Because angel hair is very thin, it cooks in only 2 to 3 minutes. Before draining, scoop out about 1/2 cup of the starchy pasta water. Cut into pieces and return the cooked sausage to the vegetable in saucepan. Add the drained angel hair pasta directly into the pan.

Pour in a splash of the reserved pasta water. I didn’t put Parmesan cheese; you can add in. Toss gently over low heat for 1 minute until the sauce coats the delicate pasta. Serve hot with a glass of Moscato Sweet Lips, white wine. Enjoy!!!

Note: You can break up the sausages if you want to. If you prefer minced beef do use it instead of sausages. I prefer my sausages to be bite pieces for some texture. You can add carrots if you like.
