
I crave for a snack. Search my pantry for ingredients to make a snack. Found one can condensed milk and, in my fridge, I found some leftover shredded coconut. Remembered that I did make Easter balls. This is an amazingly simple 4 ingredients snack.
This is great and fun sharing for kids’ lunchbox. It’s not too sweet and they will enjoy eating it. It’s not a heavy lunch box for the kids to have at afternoon tea break at school. The kids can also help in making them as part of extra activity and at the same time they can enjoy it with friends when their friends come over after school.
I am doing it from scratch, only did a small portion as I don’t want to waste food. This snack is yummy and easy to make. Let’s bake!!!!
Ingredients
250 g shredded coconut
120 ml condensed milk
1 Tsp vanilla extract
half lemon zest
Method
Preheat oven 160 degrees C. Line with a little bit of oil on foil and place in a shallow baking tray. In a bowl add shredded coconut, condensed milk, and vanilla. Mix them well. Dip a bit of oil on my hand and grab the ingredients and gentle pressing the ingredients to combine and form it to be a ball. Continue until finished up the ingredients.
Make sure you place the balls about 1/2 inches apart in the tray, bake it for about 12 minutes. Once light golden colour removes from oven. Remove the ball with a knife and a spoon onto another baking paper over the rack to cool it. Once it’s cool transfer it to a plate. I made about 20. Ate 5 to see if its yummy.
Note: Oven temperature may vary. You might need more or less. If you want to make more double the amounts.
