Poke bowl white rice beadlike

Many families have a secret recipe, a special way of cooking a dish that makes it especially savoury. For my family – Chinese ethnic group, we have a dish called yee sang, named for it’s sliced raw salmon, and grated vegetables served either as an appetizer or as a main course and is one of the main dishes, colourful appearance. It’s a dish Grandma said for longevity, prosperous and healthy life.

Of course Grandma had the best recipe. Each Chinese New Year at the family reunion dinner we would tell ourselves, “We should really learn how to cook this.” But we never got around to asking Grandma. Now she is no longer with us and her secret recipe is gone with her.

Using the memory of yee sang main dish and colourful appearance. I have created poke bowl using food from pantry and fridge. Also fresh ginger is so expensive to buy, I bought pickled ginger instead. You can find many variety styles of poke bowl. Mine is simple, easy and colourful.

This poke bowl has colourful vegetables, pickle pink ginger; bought, stir fry beef minced with onion. It’s beadlike appearance not just beautiful, colourful, has a deep flavour of sweet-tart, bitter acidic, with a pungent and spicy aroma make it delicious.Really you have to try it!

Ingredients

4 bowls cooked white rice
4 Tbs pickled pink ginger, bought, divide
500 g minced beef
300 g red cabbage, cut into bite size
1 small of each red and green capsicums, cut into bite size
1 small onion, sliced
4 cloves garlic, minced and divided
1/8 c sweet white wine
Dashes of balsamic vinegar
Worcester sauce
oil
salt
pepper

Method

In a frying pan, heat oil on high heat. Next fry onion and garlic until fragrant and translucent. Add minced beef toss around for 5 minutes brown it. Then add worcester sauce, salt and pepper and continue frying until meat are cooked though. Set aside and keep warm.

In another frying pan, heat oil on high heat. Fry garlic until fragrant. Add cabbage, fry for about 5 minutes until tender. Then add red and green capsicums continue to cook about 4 minutes. Now add wine, balsamic vinegar, salt and pepper, Toss to mix well and until wine reduced a bit and vegetables are cooked. Remove from heat. Set aside and keep warm.

Now spoon cooked rice onto bowl. Followed by vegetables, cooked minced beef and add pickled ginger. Serve with a glass of sweet white wine. Enjoy!!!!

Note: You can use any type of rice of your choice. You can have salmon and fresh salad. You can omit pickled pink ginger.
