Last week a friend shared her lemon madeira cake with me. I enjoyed it so I asks her for the recipe. She told me; the recipe is like butter cake using the basic ingredients.
However, the ratio ingredients for butter, flour and sugar must be equal. That’s 1:1:1. Her madeira cake were moist, sweet and zingy flavour. I ask her did she put honey. She told me just drizzle some on the bottom of pan.
Anyhow, after cracking my head on the amounts for eggs, honey and baking powder to add in. I came out with the idea of adding black sesame seeds and treacle syrup so I can call it my own recipe.
Instead of honey, I added treacle syrup and replace lemon with black sesame seeds. I know treacle is sweet, so I opted out sugar. Added more butter and orange juice as I have some left over from the bottle, I bought to make it more moist.
The cake is golden brown inside and out, delicious, moist, and crunchy. I am happy with my adventure of creativity, experimenting and exploring the varieties of a simple lemon madeira cake. Thus, I have brought it up to a level better than the simple madeira cake that I have had.
Though I do admit it were hard to unmould from pan where the treacle and honey syrup were sticky and stick to the pan. I managed to get it out in one piece, Phew!!!!! but it’s worth the effort of trying to bake rather than not. Be adventurous and knows no limits. Let’s get baking!!!
Ingredients
250 g unsalted butter, softened
250 g treacle syrup, 10 g for bottom of pan
200 g plain flour
200 g self-raising flour
150 ml orange juice
4 Tbs black sesame seeds, plus extra for bottom of pan
3 large eggs
2 Tsp glucose syrup
2 Tsp baking powder
honey to drizzle bottom of pan (opt)
Method
Preheat oven 150 degrees C. Drizzle honey, 10 g treacle and sprinkles some black sesame seeds at the bottom of big tube pan with a depth of 7.5 cm. Set aside for later.
Sift both flour, and baking powder baking on to a deep big plate and set aside. Beat butter, glucose and treacle syrup until well combined creamy.
Beat egg one at a time well. Now add 1 big ladle of flour mixture in and fold gently- 3 separate addition. Next add orange juice, and black sesame seeds; mix well to incorporated. The batter should be smooth consistency.
Spoon batter into prepared tube pan. Smooth top with spatula and gives a couple gentle knock on bench top. Bake for 1 hour or until skewer comes out clean.
Leave in switch off oven and door close for 30 minutes. Then remove from oven on to rack for 10 minutes. Turn out cake onto cake base and leave to further 5-10 minutes cooling before cutting cake. Serve the cake warm with whipped cream and or ice cream. Have it with brewed coffee.
Note: Oven temperature vary. You may need less or more. You may just use honey alone or just castor sugar. You can omit black sesame seeds if you don’t want to add use lemon, orange, chia seeds or berries.
You don’t have to serve with whipped cream if you don’t want it. Just eat plain with coffee. You may omit glucose syrup and replace with orange zest or lemon zest or milk.
