
There are some days we would crave for food or dessert that we love. It’s not a sin to crave for food. It’s great that we do. Just like some people crave for luxury home, car, or jewellery.
Today, I craved for Moist buttery cake. So, I make use of all block butter, and sour cream in my fridge to curb my craving before I go crazy ravaging my fridge and sleep inside.
This cake is buttery, and moist with icing sugar dusted on top. Every one of my family loves it. It’s gone within 10 minutes being serve. Serve this cake with green tea. Let’s get Baking!!!!
Ingredients
300 g unsalted butter, softened
300 g self-raising flour, sifted
300 g sour cream
220 g caster sugar
3 large eggs
60 ml lactose full cream milk
1 1/2 Tsp baking powder, sifted
1 Tsp vanilla extract
1/2 Tsp salt
Decoration
strawberry
icing sugar, dust
Method
Preheat oven to 180 degree C. Place a deep pan with boiling water in it into the oven. This helps keep cake moist soft and fluffy. Grease and line bottom of a square baking pan 8″.
Beat butter, sugar and vanilla in a bowl until pale and creamy. Add eggs, one at a time, beating well after each addition. Then add flour, baking powder, sour cream and milk, in alternating batches, stirring until combined.
Spoon batter into the prepared pan and smooth the top. Bake for 45 minutes. Then cover with another tray on top for 10 minutes until a skewer inserted comes out clean. Leave in oven with door close and switch off oven for 1 hour. Then cool further in the pan for 30 minutes before turning over to a cake base.
Place cake in fridge for 45 minutes. Then take out and dust icing sugar on top before putting in an airtight container and cover the container.
Note: You may need more or less time as oven temperature vary. You don’t have to place a pan with boiling water in the oven. As my oven is old and temperature vary. Plus, I don’t want cake to burnt too fast.
I like my cake to be buttery, moist and with icing sugar rather than cream. I opted out fruits and or chocolate inside this time.
You can make it lemon juice and zest or thicken cream or double cream. You can use any fruits if you like to add inside your cake.
