Hardboiled egg mixed salad

Bought eggs and salad on sale; feeling too lazy to cook today. Adding in leftover matchstick carrot to finish off.

Eggs are versatile and healthy to eat. You can add in with anything. Hard boiled eggs are great for deviled eggs and egg salad. Research found that it’s also raise the good cholesterol. Especially in lockdown, eggs are my consumption to boost my health.

Ingredients

1 egg
1-2 tiny drop white vinegar (OPT)
2 Tbs oil
2 Tbs lemon juice
1 Tbs honey
water
some mixed salad
oil
salt
pepper

Method

 Place an egg in a small saucepan to prevent it from rolling around too much. Cover it with cold water so that the water is about 1 inch above the top of egg. Place the uncovered pot on the stove over high heat. The moment the water reaches a full rolling boil, turn off the heat and keep the saucepan on the burner. Cover the pot tightly with a lid. Leave the egg in the hot water for 12 minutes for a fully solid, traditional hard-boiled egg. 

While waiting, prepare a bowl of cold water and ice cubes. Use a slotted spoon to move the cooked egg into the ice bath for at least 10-15 minutes. This sudden drop in temperature makes it incredibly easy to peel.

Meantime, wash mixed salad, and spin dry with salad spinner. Then transfer salad to bowl. Next add in the matchstick carrot, toss around to mixed well. Now prepare salad dressing. Place oil, lemon juice, honey, a pinch of salt and pepper in a jar, seal tightly, and shake vigorously until combined. Pour some dressing over the salad. Mixed well. 

Tap both ends of the egg to crack the shell, then peel it gently under cold running water or submerged in your bowl. The water gets under the membrane and helps it slide right off. Then use egg cutter and cut the egg. Then place the cut up egg into the salad. Serve immediate with a glass of Pinot Griggs. Enjoy!!!
