Felt like having cake. When to get butter and I found apples and blueberries on sale. Well, why not make use of these two fruits. I also have double cream that will be expired in 5 days’ time. I don’t like to waste food. Will add it with apple and blueberries.
Google: “An apple is a crunchy, bright-coloured fruit, one of the most popular in the United States. You’ve probably heard the age-old saying, “An apple a day keeps the doctor away.” Although eating apples isn’t a cure-all, it is good for your health. The phytochemicals and fiber in apples have antioxidant effects that may protect a cell’s DNA from oxidative damage, which is a precursor to cancer. Animal and cell studies have found that these chemicals can prevent new cancer cells from growing and the spread of existing cancer cells.”
“Blueberries are named for their colour. Blueberries contain vitamins, minerals, and antioxidants that provide notable health benefits. Blueberries are rich in vitamin K, which plays an important role in promoting heart health. The vitamin is also important to bone health and blood clotting.”
“Blueberries are one of the best natural sources of antioxidants. Antioxidants in blueberries help prevent cholesterol in your blood from being oxidized and may even help keep cholesterol from building up in the first place. Blueberries bring a mild, sweet flavour that’s perfect for baked goods and desserts.”
I am glad to add these fruits in my cake. They both have great benefits, sweet, healthy and delicious. Let’s bake!!!!
100 g butter, softened
1 c castor sugar
1 – 2 Tsp vanilla essence grinder (powder)
1 Tsp Parisian browning essence
2 1/4 c pl flour
1 Tsp baking soda
1 Tsp baking powder
1/4 Tsp salt
300 ml Double cream
100 ml water, might need it if batter too thick
3 medium sizes royal gala apples, cut into bite size (you can use any apples)
1 punnet of blueberries, washed and drained
Preheat oven to 180 degrees C. Grease a round baking pan. Cream butter and sugar. Add eggs and vanilla, Parisian browning essence; beat well.
Sift together flour, baking soda, baking powder, and salt. Add dry ingredients to the butter mixture alternately with double cream. Stir in apples, blueberries and add 100 ml of water as batter a bit dry. Spread evenly in greased pan. Bake for 1 hr 30 minutes.
Note: Oven do vary in temperature. You might want to bake it for 1 hour, if still dense when skewer comes out. Put in another 10-30 minutes.
