I won this JQ Nutri Doubler Boiler with a few pages of recipes in a competition awhile back. Decided to use it again. So far this is the best recipe worth recooking again with different ingredients.
Very straight forward and a handful ingredients. I as usual change the ingredients to called it my own. Today, I have added pickling spiced, leek, celery, and carrot instead of herbal ingredients and Chinese vegetables.
At least I did put it to use a couple of time. Great to have this boiler. Multi-purpose use. It’s not only for soup, braising, steaming and many more use. One day will put it for other recipes. My spiced soup/broth is delicious, comforting and really warm me up in Winter and lockdown. Let’s cook!!!!
Ingredients
2 breasts fillet, cut to bite size
1 small brown onion, peeled and cut thinly
1 leek, cleaned and cut thinly
1 carrot, peeled and cut thinly
1 celery stalk, cut thinly
1.2 Litre water
2 Tbs pickling spiced
1 clove garlic, chopped finely
salt and pepper to taste
Spring onion to garnish
Method
Blanch chicken breasts in hot water and place inside the porcelain jar. Prepare onion by frying in pan until soft. Add to chicken along with other vegetables. Fill porcelain jar with 1.2 litres of water, then add garlic, pickling spiced and seasoning.
Fill the JQ Nutri Double Boiler metal jacket with 3 litres of water. Place porcelain jar inside the metal jacket and cover with porcelain lid then the metal lid. Heat until water boils and steam start to emit from the lid. Reduce the heat and simmer gently for about 1 hour until everything is tender and cook.
Gives a couple of stir in between simmering. Check seasoning. Spoon onto bowls. Garnish with spring onion and serve with rice and a glass of white wine. Enjoy!!!!
