I saw on Masterchef TV Program a few years ago. I crave for pork scratchings, so I decided to try it. This is great to have as snacks watching Netflix. It can be stored in an airtight container for up to 3 weeks. The original link is at the bottom.
However, I finished in two days unlike my sister she save some for next time. I change the ingredient to suit me. Oh!!! I have to admit if your teeth aren’t strong please don’t make it. My dad had a tooth filling drop off while eating it.
You can add this pork scratchings with your pork belly as in Master Chef recipe and have salad. I prefer it on it’s own. Not much of hassle in the kitchen with utensils but your oven will need to be clean with Oven cleaner as the oil will splatters all over. It crunchy, spicy, salty and great for a nibbles or snacks. Let’s cook!!!!
Ingredients
300 g 1 cm thick pork skin, cut into about 1 or 2 mm wide strips
2 Tsp chili powder
water
salt
pepper
Method
Preheat oven to 180C. Bring a saucepan of water to a boil over high heat. Add pork skin pieces and blanch for 2 minutes. Remove from water and place on a rack set on a large, shallow baking tray. Pat dry with paper towel.
In a bowl add chili powder, salt and pepper. Mix well. Rub all over on the pork. Place in the oven to cook until fat has rendered, and skin is crispy, about 1 hour. Remove from oven and set aside to cool about 15 minutes on plate. If you have leftovers store it. Enjoy with a cool beer.
