Shrimp and chorizo Pasta

Went to the supermarket with intention of getting meat or poultry. I couldn’t find any meat. Only have sausages. So, I bought it to add into what I have leftovers from my pantry and fridge.

The method today is one pot cooking with all the ingredients that I have salvage from my fridge and pantry. I choose linguine, similar to spaghetti but a bit more like noodles texture. I didn’t have any tomato ragout in it nor creamy thick carbonara sauce.

I only use white wine, butter, XO chilli oil, Worcester sauce and water from linguine. The sauce is flavoured with shrimps and chorizo. It’s not a soupy sauce, but there is enough sauce for taste.

This is simple, easy yet delicious enough to share with 3 other members of my family. Let get cooking!!!!

Ingredients

36 shrimps, peeled, cleaned & deveined
250 g Linguine (or your favourite pasta), reserve water from cooking linguine about 1/2 c
1/2 c white wine
4 Chorizo sausages, sliced
1 of each red, yellow and green capsicums, cut into bite size
30 g unsalted Butter
4 garlic, diced
1 Tbs XO chilli oil (given by friend), extra garnish
2 Tsp Worcestershire sauce
olive Oil
20 g butter, to thicken the wine and OX chilli oil
2-4 spring onions, chopped, garnish
salt
pepper

Method

Cook pasta to package directions. Rinse & toss with olive oil. Set aside until needed. Heat oil and butter in large saucepan. Once oil and butter is warming hot, add chorizo in to brown, sweat a bit. Next remove chorizo from pan.

Using the same saucepan with oil and butter flavour with chorizo, add shrimps, and garlic. Sauté over medium high heat until prawns are cook and garlic softened, slightly browned & fragrant about 4 minutes.

Toss capsicums in and cook another 4 minutes. Then add back chorizo. Stir in XO chilli oil, water, wine and butter. Season with salt and pepper. Add pasta into pan. Toss well.

Spoon equal amount shrimps and chorizo linguine on to serving bowl. Garnish with extra XO chilli and spring onions.
Serve with a glass of sweet white wine.

Note: You may add your own sauce. Omit chilli oil and use chives instead of spring onions. You may use any pasta of your choice. You may use your own chosen white wine.
