Thin koay teow soup

Bought a big packet of 10 individual packet thin koay teow while shopping with my parents in a nearby Asian groceries shop. Glad that I decided to tag along with them. If not I would not have gotten this thin koay teow instant packets. I was not very hungry, but still have to have something and not having to get up in the middle of the night.

“Koay teow is dried flat rice noodles that cook in minutes for quick, convenient meals. Made from rice flour and water, sometimes with tapioca starch for added stretch. Thinner and narrower than traditional wide flat koay teow ribbons. Dried and dehydrated so it stores easily in a pantry and softens rapidly in hot water or broth. Rehydrates or boils in just two to three minutes, saving time. Naturally made from rice, making it safe for people with gluten sensitivities. Absorbs the flavours of soups, broths, and light stir-fries very well.”

I didn’t add any meat or green vegetables. Just a stalk of home grown spring onion and fried shallots. It’s comforting and delicious. Let’s cook in microwave!!!

Ingredients

1 packet thin koay teow
1 stalk green part spring onion
fried shallots
water

Method

Put kettle on. Open the koay teow packet and condiments that comes with it. Place it into a bowl with a plate for easy to remove from microwave late.

When water is hot boiled. Pour enough water into the prepared bowl of koay teow. Give a couple of stirs. Open microwave door, carefully place the plate with a bowl of hot water koay teow in. Cook for 5-7 minutes until koay teow is softened and cooked.

Open the microwave door, carefully bring out the plate with bowl of cook koay teow out to table. Scatter some cut spring onions and fried shallots. Enjoy with a cup of tea.
