Strawberry oats with chia seeds strawberries and chocolate sprinkles

Felt hungry and I had already had my dinner. Remembered I had leftover rolled oats in my pantry and chia seeds. In my fridge some strawberries. For creative late snack, I add chocolate sprinkles.

“Rolled oats are steamed and flattened whole oat groats, which cook quickly while retaining most nutrients. They are high in fiber, protein, and minerals, beneficial for breakfast options and help lower LDL cholesterol. Their slow digestion prevents blood sugar spikes, keeps you full longer, aids gut health, and provides essential vitamins and minerals.”

“Chia seeds, from the plant Salvia hispanica, are nutrient-dense and rich in fiber, omega-3 fatty acids, and essential minerals. They absorb liquid to form a gel that aids digestion, promotes heart health, and helps maintain stable energy levels. Their high fiber content supports bowel regularity and gut health while preventing blood sugar spikes and curbing cravings by promoting a feeling of fullness.”

“A strawberry is a nutritious, low-calorie fruit rich in vitamin C, fiber, and antioxidants, offering health benefits such as heart protection, immune support, and improved digestion. One serving fulfills over 100% of daily vitamin C needs, helps lower bad cholesterol, and regulates blood pressure while preventing sugar spikes and supporting cognitive function as you age.”

I put it in the freezer for an hour and then in the fridge for 2-3 hours, and it thickened. I’m glad to have a healthy late snack. Let’s cook!!!

Ingredients

1/2 cup rolled oats
1 Tbs chia seeds
3/4 c milk
1/4 c sour cream
8 strawberries, washed, stems removed, and chopped
4 strawberries, cut to bite sized for topping
1 Tsp runny honey
1/2 Tsp rose water (OPT)

Method

Add the rolled oats and chia seeds to a bowl. Pour in the milk, sour cream, honey, and rose water. Then stir well. Fold in chopped fresh strawberries until evenly distributed. Cover bowl and place it in the freezer for 1 hours, to let the oats and chia seeds thicken the liquid.

After 1 hour in the freezer, I give a stir. Watch it closely so it does not turn into ice. This stops the top from freezing solid. Note: Sour cream and milk can separate or get icy if they freeze too hard. Bring out from freezer to fridge for 2-3 hours more. After 3 hours, bring out from fridge. Stir in bite sized strawberries and sprinkles chocolate sprinkles over. Serve immediately.
