
Bought a packet of minced beef marinated in Italian spices to go with pasta. Forgot to get pasta. Change it to go with bread, egg, and cos lettuce. Thanks to God, I got eggs, bread and cos lettuce.

I know patties are supposedly to be round cake as they are made to go with buns like hamburgers. Well, my bread is square, so I combined the 4 small balls of minced beef and shaped it into square to fit into my bread. I must have chili sauce to go with it. My simple creative lunch is satisfying comforting and delicious. Let’s cook!!!
Ingredients
1 packet Italian meat balls
3 slices of bread
3 eggs
1-3 Tbs milk
1 onion, sliced
oil
butter
cos lettuce
mayonnaise (OPT)
chili sauce or tomato sauce
Method
Wash your hands clean and dry. Open the packet of meat balls. Take 4 meat balls mix them to combine and flatten to at least 1/2 inch thick for even cooking. Place them on a line baking tray. Repeat with the remaining meat balls.
Using a cast iron pan or heavy based pan. Preheat it over medium high heat. Add a small amount of oil and 1 Tsp butter if using to the pan, just enough to prevent sticking. Place the patties in the hot pan, being careful not to overcrowd it.
Cook for 3-4 minutes per side for a medium-rare, or longer depending on desired doneness. Avoid pressing down on the patties, as this can squeeze out juices. I cooked mine: medium, cook for 4-5 minutes per side. To flip over I use spatula. This will help you flip the patties without losing the flavourful crust. Let the patties rest for a few minutes after cooking to allow the juices to redistribute.
While patties are cooking, beat the eggs and milk in a bowl, and season with salt and pepper. Set aside. Then heat another pan with some oil and allow the oil to get hot before tilting the pan to coat it in an even layer of oil. Add the sliced onion, cook for 2-4 minutes until slightly caramelized, soft and fragrant; stirring often to brown evenly.
Use spatula to spread the onion evenly in the pan. Pour the egg mixture into the pan — the edges should be pop and sizzle. Let sit, undisturbed, for 15 to 20 seconds (the eggs should be beginning to set around the edges). Use a rubber spatula to push the eggs and sliced onion around the perimeter of the pan in a circular motion, tilting the pan slightly, if needed, so that the runny eggs in the center run out to the perimeter until eggs and sliced onion are cook at the bottom. Check by lifting up the edges using spatula. Then using a plate that is the same size as pan; cover the pan and flip over to the plate. Gently slide back the egg to continue cooking the other side. Let sit, undisturbed, for 20 to 30 seconds.
Put some cos lettuce on the left and right side of plate. Then butter the 3 slices of bread and put them in the center between the cos lettuce. Divide the eggs to three equal portions and place on top of the buttered bread. Followed by beef patties; each on the prepared plates. I squirt some mayonnaise near beef burger, and splash chili sauce and some mayonnaise on top. My parents prefer with tomato sauce. Enjoy!!!
