Persimmon apple yuzu dip cake with heart shapes chocolate and raspberry bite

Got the persimmons from my dad’s friend. Watched Masterchef 2026 dip episode and am keen to try it. None of them had made it using on cake. Make this cake to surprise my two friends who are celebrating their birthday together. Thank you, God for your help to create dip and using it two ways.

“A persimmon is a sweet, orange fruit resembling a tomato, rich in vitamins, minerals, and fiber. The two main types are Fuyu (crisp) and Hachiya (soft). I made a two-way dip for my cake, and my friends loved it, taking some home for their families. Let’s bake!!!

Ingredients

Tempering chocolate

290 g dark chocolate
1 Tsp truffle infused oil

Persimmon apple yuzu dip

2 medium ripe persimmons
1 royal gala apple
1 granny smith
1/8 c water
3 Tbs cold milk, (add more if the dip is too thick)
1 Tsp yuzu juice, bought
a pinch of cinnamon (OPT)

Cake

250 g butter
250 g plain flour
200 g castor sugar
4 eggs
50 ml milk
2 Tsp vanilla extract
1 Tsp yuzu juice
1 1/2 Tsp baking powder
pinch of salt

Method

Do dark chocolate tempering in advance a day or a few hours

In a pot, place about 6 inches of water on medium heat. Put a metal or glass bowl on top without touching the water and cover / sit on top to prevent steam from escaping. Add dark chocolate into the metal bowl, stirring from the middle out until the chocolate is melted completely.

Remove from the hot pot and switch off the hob. Stir in the oil until the chocolate is glossy and forms a slightly thick liquid. Pour into a microwave jug. Now pour into the heart shapes moulds and place them in the freezer for 4-6 hours until hardened and set. Unmould and transfer to an airtight container and place back in freezer until needed.

Persimmon apple yuzu dip

Wash persimmons, cut off the green top, removed skin, and scoop out any hard seeds if persimmons have them. Then cut to pieces. Wash both the apples, cut them to bite sized, and cored.

Put the persimmon pieces, both bite sized apples, water, milk, yuzu juice, and cinnamon, if using in Nutri Bullet. Blend until the mixture is creamy and have some texture. Set aside in fridge until needed.

Cake

Preheat oven to 180ºC. Grease and line 9 inch round spring form pan.

Sift flour, baking powder and salt two times. Set aside. Beat butter for 5-7 minutes until creamy. Now add in castor sugar and beat till light and fluffy for about 10 minutes, scrapping batter down the sides. Add egg one at a time, beating well each addition until combined.

Now add in half flour mixture and vanilla, mixing well with a big metal spoon until combined. Next add in milk, mix until combine. Once combined, add remaining flour mixture and yuzu juice; mix until incorporated.

Spoon with a big metal spoon some batter into prepared pan. Dollop some persimmon, apple, and yuzu juice dip all around the batter. Using a butter knife or skewer swirl around the persimmon, apple, and yuzu juice dip all over the batter. Then spoon the remaining batter over the top and dollop some more the persimmon, apple, and yuzu juice dip all over the batter. Using a butter knife or skewer swirl around the persimmon, apple, and yuzu juice dip all over the batter. Smooth the top.

Put the remaining the persimmon, apple, and yuzu juice dip keep back in fridge. Bake cake for 40 minutes or until skewer come out clean. I have added another 10 minutes as it is still wet. Now check again with skewer and skewer come out clean, then cake is done baked. Switch off oven, leave cake in the oven for 35 minutes with door close.

Remove from oven after 35 minutes. Let it cool in pan 45 minutes before turning cake over into cake plate base with handle. Let it cool completely. Just before leaving home, bring out the remaining persimmon, apple, and yuzu juice dip. Spoon the persimmon, apple, and yuzu juice dip all over the top of cake. Next place the bought plastic word “Happy Birthday”, two chocolate heart shapes, 1 candle and scatter some raspberry bites around the top. Serve with extra heart shapes chocolate and a cup of coffee or tea or dessert wine. Enjoy!!!

Note: Because it is very sour, you only need a little bit at a time. Cooking: Use it just like you would use lemon or lime juice. It is great in salad dressings, marinades for meat or fish, and dipping sauces. Drinks: Add a splash to hot water and honey, or mix it into cocktails, mocktails, and sparkling water. Skincare: Many skincare products use yuzu extract to brighten skin tone and promote collagen (the protein that keeps your skin firm). You can find pure yuzu juice, or drinks made with it, at many Asian grocery stores or through online specialty food shops.

Yuzu is its own distinct citrus fruit native to East Asia. It is a natural hybrid between a sour mandarin orange and an Ichang papeda (a type of wild citrus). Why people confuse it with grapefruit:
Yuzu naturally shares a very similar flavour profile and aroma to grapefruit. People often describe its taste as a complex blend of grapefruit, lemon, and mandarin orange. While pure yuzu juice is made entirely from yuzu fruit, it is always a good idea to check the ingredients label on bottled juices or pre-made yuzu condiments. Some commercial brands may blend it with other citrus juices (like grapefruit, lemon, or lime) to balance the flavour or reduce costs.
