Koay teow noodle soup with mushroom salad and fried shallot

Bought koay teow instant packet and sliced mushrooms on sale. Got leftover rocket and spinach leaves. My lazy type of lunch. Love eating instant packet noodles. Eat the instant packet noodle in moderation.

Rocket (arugula) is a nutrient-dense leafy green that enhances cardiovascular, eye, and bone health. This peppery cruciferous vegetable, common in Mediterranean cuisine, is rich in nitrates, calcium, and Vitamin K, while also providing fiber and Vitamin C. Ingredients

1 packet instant koay teow
sliced mushrooms
leftover rocket and spinach leaves
water

Method

Put kettle on. Open the packet and the condiments that come with it. place into a bowl with a plate at the bottom for easy to carry out of microwave later. Once water is boiled, pour some hot into the prepared koay teow with condiments, rocket and spinach leaves.

Microwave on high for 6-7 minutes, depending on the power (1100 watts), until koay teow, rocket, and spinach are softened and cooked. Carefully remove from the microwave and now add in mushrooms. Toss to mix around the koay teow, rocket and spinach leaves. Scatter fried shallots over the top. Enjoy with a cup of tea!!!

Note: You can add fish cake, fish balls, beef balls, chicken pieces and tofu pok. Vegetables of your choice: buk choy, choy sum, carrots, 3 colours capsicums, and cabbage. Do blanched in hot boiling water first for 3-5 minutes, especially stems extra 1-2 minutes. Then add to the noodles and microwave together.
