Air fryer crumbed prawns leek chili tuna and chopped tomatoes pasta

Hooray!!! I found angel hair pasta and bought 3 packets along with Coopers Original Pale Ale, more prawns, buttermilk, leek, capers, and plain olive oil tuna. I’m adding chili sauce to my pasta and using both angel hair and spaghetti.

Ingredients

Air fryer crumbed prawns

250 g prawns, bought ready peeled and deveined (tails left on for presentation)
1/2 c buttermilk, divided
1/2 c pale ale, extremely cold in fridge overnight or very cold 2-4 hours, divided
1/2 c plain flour
1/3 c breadcrumbs
1-2 Tbs Old Bay seasoning
1 Tsp milk
1 Tsp baking powder
1 Tsp garlic powder
1/2 Tsp cayenne powder (OPT)
spray oil, for baking tray foil

Angel hair and spaghetti

150 g angel hair
150 g spaghetti
8 to 12 cups of water
1 1 1/2 Tbs salt

Leek chopped tomatoes and cappers

8 cherry tomatoes, chopped
1 canned olive oil tuna, 95 g
1 Tbs capers, bought
about 6-8 inches leek, sliced
1 Tbs minced garlic
1 Tbs chili sauce, plus extra if needed
1 Tbs pasta paste, plus extra if needed
about 1/4-1 c of starch pasta water
water to cook pasta
salt
oil
pepper

Method

Prepare prawns and breading

Whisk together 1 Tsp full cream milk, 1/4 c buttermilk, and 1/4 c pale ale in a deep wide bowl. Then add prawns in to soak and put soaking prawns in the fridge for 15-20 minutes. The acid in the buttermilk, milk and pale ale will gently tenderize the prawns.

In a separate medium mixing bowl, whisk together the plain flour, 1/4 c buttermilk, 1/4 cup of pale ale, and baking powder until smooth. The batter should resemble a slightly thick pancake batter.

In a separate medium deep plate add breadcrumbs, 1 Tbs Old Bay seasoning first, garlic powder, and cayenne powder if using. Mix well to combined.

Line baking tray with foil that can sit into air fryer cup. Set aside until needed.

Water and salt ratio to cook both pasta

Meantime, fill a large pot with at least 8 to 12 cups of water so angel hair and spaghetti have room to move freely so it doesn’t clump. Bring the water to a rapid, rolling boil. Add about 1 1/2 Tbs of salt once the water hits a rolling boil. The water should taste slightly salty.

Cooking the Pasta

Spaghetti

Drop in the 150 g of spaghetti and stir immediately for the first minute to prevent spaghetti from clumping together. Let it cook for 8 to 10 minutes Start tasting spaghetti at the 8-minute mark. It should be tender, but still have a slight bite or “chew” in the center. Ladle about 11/2 c starchy pasta water reserved it. Carefully remove the spaghetti with tongs or drain using a colander.

Angel hair

Using the same salted water roiling earlier. Now drop in the 150 g of angel hair pasta and cook for 2 to 3 minutes. Angel hair tends to clump; stir it as soon as you drop it into the water to ensure the strands separate. Angel hair cooks incredibly fast. Start tasting one strand of angel hair using food clippers after 90 seconds to 2 minutes of boiling to ensure it doesn’t overcook and bite into it. It should be tender, but still have a slight bite or “chew” in the center. Drain immediately into a colander. Do not let it sit in the hot water, or it will turn mushy.

Cook leek chopped tomatoes and capers

Heat 3 Tbs oil in a saucepan over medium-low heat. Add garlic and cook for about 30 seconds until fragrant. Next add both green and white sliced leeks and cook for 5 minutes until slightly soft and fragrant. The green portion is more fibrous, so cooking it slowly ensures it becomes tender without burning.

Back to drain excess liquid of prawns

After soaking prawns, let them drip thoroughly in a colander before coating for 5 minutes. Wet prawns will not crisp up. After 5 minutes up, pat them dry with a paper towel. Let it sit on paper towel.

Back to cook leek chopped tomatoes and simmer

Stir in the chopped tomatoes and cook for 5 minutes, and 1 Tbs each chili sauce and tomato paste first. Add the 1/2 c of starchy pasta water to loosen the paste into a rich sauce. Let it simmer for 3-5 minutes until the tomatoes break down. Switch hob off.

Back to batter and dredge prawns

Dip each dry prawn into the buttermilk-beer batter, allowing the excess to drip off. Then, press the prawn gently into the plate of seasoned breadcrumbs until it is fully coated. Repeat for all prawns.

Air Fry and cook prawns in batches

Preheat your air fryer to 200°C for 3 to 5 minutes. Lightly spray the prepared baking tray with foil to prevent the batter from sticking. Place the battered and crumbed prawns in a single layer in the prepared baking tray, making sure they do not overlap.

Lightly spray the tops of the prawns with oil spray. Air fry for 6 to 8 minutes. Halfway through the cooking time (around the 4-minute mark), carefully, remove the cup of air fryer. Flip the prawns and give them another quick mist of oil spray. Cook until the batter is golden brown and the prawns are crispy, cooked through and firm to the touch. Removed the cook prawns to a serving plate. Repeat air fry all the prawns. Don’t over crowds them.

Back to cook leek chopped tomatoes sauce and add pasta along with capers

Switch hob on. Now add in both pasta and capers. Toss pasta and capers around for 2 minutes to heat them through and release their briny flavour. If the sauce is too thick or the pasta is still firm, add another 1 c of the reserved pasta water and 1 Tbs tomato paste and 1 Tbs chili sauce into the saucepan. The starches in the water will bind with the oil or tomatoes in the sauce, creating a glossy, silky texture. Flake in 1 can of olive oil tuna. Turn off the heat and gently stir to mix well tuna with everything in saucepan until it is heated through. 

Assemble

Spoon some pasta into bowls and place 5 air fryer prawns on top of pasta. Serve with a glass of red wine. Enjoy!!!
