Air fryer Mediterranean style broccolini

I found a small bottle of my Mediterranean spices and herbs hidden among my cake ingredients. I checked for mold and it’s still edible. My broccolini is not looking fresh and won’t last another day or two. I decided to cook it in the oven to save time and electricity. Using the air fryer is quicker and doesn’t require preheating for more than 5 minutes. I’ve written down my Mediterranean style spices and herbs for you to store in an airtight container.

Italian cuisine is heavily influenced by Mediterranean flavours, including olive oil, fresh produce, seafood, and aromatic herbs and spices. A Mediterranean-style diet features vegetables, fruits, extra virgin olive oil, wholegrain breads and cereals, legumes, nuts and seeds, fish and seafood, as well as various herbs and spices like oregano, garlic, cumin, thyme, black pepper, paprika, and basil.

This is my experimental attempt at broccolini with Mediterranean spices and herbs. The broccolini looks lively, crunchy, bursting with Mediterranean flavour, and delicious. Let’s use the air fryer and make sure it’s not charred black!

Ingredients

1 bunch of broccolini, wash, dry, stems removed, cut to bite size
1 Tbs oil
1-2 Tsp Mediterranean style
spray oil, (OPT)

Mediterranean styles (herbs & spices)

2 Tsp garlic powder
2 Tsp Italian Seasoning
2 Tsp chili flakes
1 Tsp dried basil
1 Tsp paprika powder
1 Tsp dried thyme
1/2 Tsp fennel seeds
1/2 Tsp marjoram
salt
pepper

Method

Toss the broccolini in oil and Mediterranean style herbs and spices, then preheat the air fryer to 160 degrees C for 3 minutes. Line a baking tray with a double layer of foil that fits your air fryer. Place the marinated broccolini in the prepared tray. Carefully put the tray into the cup of air fryer. Be cautious as it will be hot, and return the cup to the air fryer machine.

Air fry for 10 minutes, then check the thickest stem for tenderness. Flip the broccolini over, spray with oil a little bit, and air fry for another 5-7 minutes. Once slightly golden brown and tender, it’s ready. No more overcooking!

Bring out from the cup of air fryer. Plate up and serve as a side or eat with fish, meat or rice. I had mine with air fryer salmon and salad. Enjoy!!!!
