Penang white curry mee soup with broccoli and minced pork eggy

My favourite meal for one is instant packet noodles soup. It’s a quick, simple and easy to cook. This is my lazy meal or just don’t feel like spending too long in the kitchen. I have leftover minced pork broccoli eggy and decided to add it in to clear my fridge. I have written down the recipe for minced pork broccoli eggy for you.

All you needed is stove, a pot with hot boiling water and addition ingredients to go with this noddle. You can make it a hearty dinner with your addition ingredients. As usual I love adding some colour to my meal. With freezing cold Winter and heavy rain, having noodles helps keep me warm.

Ingredients

1 packet Penang white curry mee soup
Hot boiling water

Minced pork broccoli egg

500 g minced pork
5 eggs, lightly beaten
2 small broccoli, florets and stems thinly slice
1 Tbs minced garlic
1 Tbs oyster sauce
1 Tbs soy sauce
1 Tbs Shao Xing cooking wine (OPT)
oil
salt
pepper

Method

For you, you have to cook the minced pork broccoli egg first. I have leftover, I add to my noodle and warm it as I cook my noodle in a pot of boiling water on stove. You can cook more noodle as the minced pork broccoli egg are enough for 4 to 6 people.

To cook minced pork broccoli eggy

Heat oil in saucepan on medium heat. Add garlic and cook for about 1 minute. Then add minced pork, toss around and cook until all brown about 4-5 minutes. Now add in oyster and soy sauces, mix well into minced pork. Next add in the broccoli stems cook for about 2 minutes.

Now add in broccoli florets cook and toss around until tender. Add in Shao Xing cooking wine, mix well to incorporate. Pour in the lightly beaten eggs, salt and pepper and cook for about 2-3 minutes and mix well. Check the seasoning. Once eggs are cooked, off the hob and spoon on to serving plate. Keep warm.

Penang white curry mee soup

Put kettle on. Open the Penang white curry mee soup and condiments that come with it into the bowl. Place a plate at the bottom for easy to carry out from microwave later. Pour enough hot boiling water into the prepared bowl. Open the microwave door and put the plate with noodles inside the microwave. Cook for 5-7 minutes until noodles are soft and cooked.

Carefully bring out from microwave. Spoon enough minced pork broccoli eggy into the noodles soup. Give a couple of stirs and mix well. Enjoy with a glass of Pinot Griggs!!!
