Toast bread with cheese mortadella and salad

Went to get some salad, and cheese. As I were heading to the cashier, I saw from the corner of my eyes the packets of mortadella were on sale. Couldn’t resist it so, I bought it.

Google: “Mortadella is a large Italian sausage or luncheon meat made of finely hashed or ground cured pork, which incorporates at least 15% small cubes of pork fat. It is traditionally flavoured with black pepper grains, but modern versions can also contain pistachios or, less commonly, myrtle berries.”

“Mortadella needs to be finely sliced so it drapes like silk to make it attractive on the plate and increase the surface area to release the delicate spice and garlic notes. Warming the mortadella releases the aroma further so serve it on fresh bread browned in hot oil, seasoned with rosemary or on hot gnocchi fritto, as they do at Bar Di Stasio in St Kilda.”

Today, my lunch is a simple buttered toast bread with fresh ingredients that I just bought. My lazy lunch that looks healthy, colourful and delicious. Let’s eat healthy!!!

Ingredients

2 toast bread, buttered
6 slices mortadella
2 smoked cheese
salad mixed

Method

Put two slices of bread into a toaster to toast. Wash salad and dry, set aside. Open two packet of smoked cheese. Once, toasted breads are done, spread butter over it.

Followed by 3 slices mortadella, folded into halved, lay on top of buttered bread, then place cheese over the top of mortadella. Repeat with the remaining toasted bread. I like my cheeses to melt a little bit, I put into microwave for 15 seconds.

Removed from microwave, place some salad mixed on top of the lightly melted cheese. Enjoy with a cup of coffee!!!
