
Bought lettuce, onion, and frozen carrot and peas. My mom gave me some eggs. Decided to combine them to make a healthy colourful vegetables dish to go with rice and leftover can go with noodles.

Ingredients
1 onion, sliced
200 g frozen carrots and peas, thawed
300 g lettuce, cut to bite sized or strips
3 eggs, beaten
1 Tbs minced garlic
1 Tbs white wine vinegar or Shao Xing Chinese cooking wine
oil
salt
pepper
Method
Heat 3 Tbs oil in a saucepan over medium heat. Add garlic and onion. Cook for 2-3 minutes until fragrant and soft. Add the sliced lettuce and cook for 2 minutes until it shrinks and stays bright green.
Now add in frozen carrots and peas. Stir and cook for 3-4 minutes until warm. Push the vegetables to one side of the pan. Season beaten egg with a pinch of salt and pepper. Pour beaten eggs into the empty side.
Stir the eggs until they cook into small pieces. Mix them with the vegetables. Add white wine vinegar or Shao Xing Chinese cooking wine. Cook for 1 minute and toss everything together. Check seasoning. I have added extra pepper and salt a tiny bit. Switch off hob. Transfer to a big bowl. Serve with rice and a glass of Blanc Noir from my cousin brother!!!
Note: You can use fresh carrots about 2 medium size, cut into cubes or thinly sliced, broccolini, cut to bite sized, add tomatoes if you like red colour, and corns kernel. You can use just 2 eggs instead of 3. You can add white wine instead vinegar or Shao Xing wine.
