
Today I am finishing off the last 2 packets of vermicelli noodles. I have bought the wrong canned pork. I intended to buy stewed luncheon pork canned and got pork sliced canned instead. Addition, I am making coca cola grilled drumettes as I had not had it for a while. For vermicelli noodles I added some leftovers napa cabbage, one packet of thinly sliced black fungus and some carrots.
“Chicken drums, also known as drummies or drumettes, resemble smaller versions of the drumsticks from the chicken legs. Chicken drums are the uppermost parts of the chicken wing, and while they can contain more meat overall, they also feature large amounts of cartilage around the joint ends.”
This recipe is multi-tasking. Everyone have their ways of eating and different taste bud; I recommend that you always check your seasoning well to your taste bud till you get it delicious. Let’s cook!!!
Ingredients
Coca cola grilled drumettes
To Marinade
12 chicken drumettes
80 ml apple cider vinegar
1 Tbs red wine vinegar
1 can coca cola
4 Tbs chili powder
2 Tbs ground black pepper
1 Tbs honey
1/2 Tbs ground cinnamon
1/2 Tbs Worcestershire sauce
2 Tsp sweet paprika
1 Tsp cumin
a pinch of salt
spray olive oil
Stewed pork sliced vermicelli noodles and vegetables
2 block vermicelli
1 Tbs oyster sauce, marinate vermicelli
1/2 Tbs soy sauce, marinate vermicelli
2-3 carrots, cut into matchsticks
6 napa cabbage leaves, cut into bite size
1 packet thinly sliced black fungus, soaked in hot boiling water for 30 minutes
1 canned sliced pork, about 210 g
3 Tbs oil
1 Tbs minced garlic
85 ml water, plus extra 15 ml
1 1/2 Tsp chicken powder stock
1/8 Tbs oyster sauce
1 Tsp soy sauce
1/8 c chicken stock
1 Tsp salt, extra
1 Tsp pepper, extra
Method
Coca cola grilled drumettes
Marinade in advance – one day
Put the drumettes into double plastic bag with the marinade. Move the drumettes around in the bag until they are well marinade for one day, during the time: toss drumettes in bag to marinade every 3-4 hours.
The next day – Grill drumettes
Preheat grill. Line a baking sheet, double layer aluminium foil on tray and spray some olive oil. Then place drumettes. Grill over high heat (Electric grill) for about 10-12 minutes first then turn over the other side, after 7 minutes, bring out and baste the drumettes with the uncooked marinade. Place back into grill; continue grilling for 5 minutes.
Stewed pork sliced vermicelli noodles and vegetables
Meantime wash hands clean. Then put kettle on. Once boiled, soak vermicelli in hot boiling water until softened and drained. Then marinate with 1 Tbs oyster sauce and 1/2 Tbs soy sauce for colouring. Set aside.
Heat oil in wok on medium heat. Brown garlic for 1 minute. Add napa cabbage and thinly sliced black fungus cook for 2 minutes. Then add carrots and mix well cook for 2 minutes. Switch off hob. Mix well 85 ml water with chicken powder stock, salt, pepper and set aside.
Back to grill drumettes
Get mitten ready. When time up grilling, bring out the tray of drumettes. Then turn over the other side, and basting with the uncooked marinade. Then turn grill lower and grill for 7 minutes. Bring out again and basting with the uncooked marinade. Grill a further 6 minutes until crispy, and cooked. To test take one and cut the fattest part to check that inside is cooked. If not, grill for another 3-5 minutes.
Brush drumettes with a little more marinade both sides, cover with foil and let rest on the turn off hot grill for 5 minutes before transferring to plate.
Back to cooking stewed pork sliced vermicelli noodles and vegetables
Switch on hob. Next add chicken powder stock mixture, salt, pepper, vermicelli and 1/8 c chicken stock, stewed sliced pork – cut into bite size with the fat oil that comes with it in the canned. Stir to mix well everything with spatula and a pair of chopsticks or tong. Now add 15 ml water, oyster sauce and soy sauce, toss to combine well. Check seasoning. I like mine a bit more salt and pepper. I have added some salt and pepper. If its ok with your taste bud, don’t put more salt and pepper.
Assemble
Spoon some of the stewed pork sliced vermicelli noodles and vegetables on to bowl. Then place 2 -4 drumettes on the top edge of the stewed pork sliced vermicelli noodles and vegetables. Enjoy with a glass of Pinot Griggs!!!
Note:
For stewed pork sliced vermicelli noodles and vegetables: You can use sliced beef, chicken or fish instead of stewed pork. You can use all chick stock instead of some chicken powder. You may add seafood, or use egg noodles. You can add cauliflower, peas, green beans or broccoli instead of napa cabbage and carrots for colouring: red capsicum and baby corns.
For coca cola drumettes: You can use chicken wings, meat with a bit of bone. I suppose the whole chicken like beer chicken using can beer such as Guinness Stout, empty half into a glass and let chicken sit on the remaining half in the can and perhaps baste coca cola marinade on the whole chicken. You can make your own chili sauce or tomato sauce to go with it.
