Shin ram yun noodles soup with fishcakes and dumplings

My lunch yesterday is this my favourite quick and easy meal. Using dumplings brought from Costco and fishcakes from the Asian groceries. My mom gave me some bean shoots, so I have added it in.

Bean shoots is what I call them. They are in different wording but is the same as “Mung bean sprouts are a culinary vegetable grown by sprouting mung beans. They can be grown by placing and watering the sprouted beans in the shade until the hypocotyls grow long. Both sprouts and shoots are immature plants, but they differ in that shoots are slightly ‘older’ and are clipped from the seed. Shoots are packed with nutrients since they are harvested at the stage of development just before the plant explodes into maturity.”

“Thai fish cakes are a common street snack in Thailand. Very flavorful compared to most Western fish cake recipes, they aren’t battered, which allows for more of the fresh taste of the fish, spices, and herbs to come through. These cakes are best eaten right out of the oil while they’re still hot and juicy.”

How lovely my bowl of noodle soup lunch that consists of ingredients from Korea, Thai, and China. I have everything that is spicy, different shapes, comforting and delicious. It’s not expensive to enjoy in the comfort of my home. Let’s cook before my stomach growl like a Lion roar.

Ingredients

1 packet Shin ram yun noodles soup
4 dumplings, cut in halved
4 Thai fish cakes, cut in halved
a handful bean shoots
water

Method

Put the kettle on. Place dumplings and fish cakes in the bowl. Once the water is boiled, pour enough into the bowl. Microwave it on high for about 3 minutes, then again microwave further 2 minutes. Next open the noodles soup packet and empty it into bowl with dumplings and fish cakes and add the condiments from the noodles packet. Make sure hot water is enough.Then place in a plate and into microwave.

Microwave for 3 minutes and then again for 3-4 minutes until noodles are really soft and cooked. In the last 30 seconds of microwaving, stop and open the door and add in the bean shoots, gives a couple of stirs. Close the microwave door and continue cooking. Once done serve immediately. Enjoy!!!!!

Note: You can cook your noodles soup in a pot with water. Bring water to boil. Then add in noodles and all the ingredients you like. It will take you about 5 -7 minutes. For me 5 minutes is not enough the noodles are a bit firm still. I prefer it to be softer and it brings out the taste of the condiments more.
