
Felt like having KFC chicken yet I refused to buy as it’s expensive. I bought a mixture of thighs, and drumettes, to cook meal for one. Also, I needed some spiciness in my taste bud. This my recreation of KFC chicken with a bit of me and experimenting method of cooking.
Google: “It is better to use skin-on chicken parts when roasting in oven so that we have them crispy on the outside and moist and juicy on the inside. Skin functions as a natural cover to prevent the chicken from drying in the oven. The best thing about chicken skin is that it is considered as a source of healthy, unsaturated fat. Plus, it gives a nice flavour. So, you don’t need to remove it even after the chicken is cooked.”
This is a super easy recipe for baked chicken pieces. They are flavoured with Italian seasoning, oil, lemon juice, brown sugar, paprika, garlic powder, onion powder, salt and pepper to make the best comforting weeknight dinner. I add sugar just to helps the seasonings to caramelize as it bakes. I am glad that my creation of KFC is spicy, crispy, moist and delicious. Let’s bake!!!
Ingredients
2 thighs and 2 drumettes, skin and bone in, wash and pat dry
olive oil
For marinade
1/8 c lemon juice
1 Tsp brown sugar
1 Tsp paprika powder
2 Tsp garlic powder
2 Tsp onion powder
salt
pepper
Method
Mix marinade ingredients in a bowl until combined, then add chicken and toss to coat. Try to rub some of marinade underneath the skin as well as on top of the skin for the most flavourful chicken. Preheat oven 200 degrees C. Drizzle both sides of the chicken with olive oil. Now add the chicken into the oven proof bowl.
Bake for 30 minutes. Reduce the heat 190 degrees C and bake for 10-20 minutes more until tender when poked with a knife. Remove from oven and serve with a cool beer. Enjoy!!!!!
Note: You could use whole chicken, breast, wings, or drumsticks. You could use honey instead of brown sugar. You can omit lemon juice just use brown sugar. You can add any seasoning of your choice.
