Kim chi minced pork vegetables fried tofu with rice

Got kim chi from my sister as I told her to get me one from Costco when she does go for her supply. With a packet of firm tofu and some cabbage that I had in my fridge, I decided to add some minced pork so I have a complete meal for my dinner tonight and some leftovers for next time.

My friend told me when fry tofu with potato starch coating it will have crispy crust formed. I don’t have potato starch so I change it using custard powder by mistake. I am glad it turned out ok. Do you know fried tofu that has been stir-fried with minced pork and vegetables will have more savoury flavour? Well, mine did and am glad I have created something new from accidentally adding custard powder instead of cornflour. My dinner is simple flavourful minced pork vegetables fried tofu and spicy from kim chi. Enjoy!!!

Ingredients

Marinade pork

300 g minced pork
1 Tbs Shoa Xing, Chinese cooking wine
1 Tsp soy sauce
1 Tsp sesame oil
1 tsp minced garlic
1/2 Tsp dark soy sauce
1 Tsp fish sauce (OPT)

Cabbage and tofu

6-8 cabbage leaves, cut to bite size
1 packet firm tofu
1 Tbs minced garlic
1 Tbs soy sauce
1 Tbs Shoa Xing, Chinese cooking wine
oil
salt
pepper
cornflour or custard powder
water or chicken stock

Method

Add pork and marinade into a bowl and mix well, then cling wrap and refrigerate for later about 30 minutes. Cut the firm tofu into square bite size and place on paper towel to absorb access water then roll/ turn in custard powder, shakes off access meanwhile heat some oil about 2-3 Tbs in pan for shallow fry until hot. Then add tofu into hot oil and brown on all sides. Don’t over crowd them. Once done, removed to a new paper towel to absorb oil.

Using the same pan, add a bit more oil about 1 Tbs, add garlic and cook until fragrant about 35 seconds. Next add pork with the marinade in until cooked. Followed by cabbage leaves, salt and pepper stir and mixed well with pork until cooked. Now add in cooked tofu and add chicken stock about 1/8 c, gently toss to mixed in with minced pork and cabbage for about 4-5 minutes.  Check seasoning. Once done plate up. Serve with rice and kim chi. Enjoy it with a glass of white wine!!!!
