Spooky face cake

Google: “Halloween or Hallowe’en, less commonly known as Allhalloween, All Hallows’ Eve, or All Saints’ Eve, is a celebration observed in many countries on 31 October, the eve of the Western Christian feast of All Hallows’ Day.”

Let’s get mischievous with creating a cake, rather than craving it on pumpkin. I seldom see a witch flying in broomstick but always seeing pumpkin been cut into a scary face. I decided to create my spooky creation on my cake.

Have been trying to get spiders, witches chocolate I could find it, all I see are chocolate eyes. Then I see fog shapes chocolate are on sale. I am not really a fan of chocolate till I get it just to decorate my cake. Glad that I have my favourite fruits: berries even though its expensive and I have not make olive oil cake for a about a few years now.

It’s good for a change to have olive oil cake. Baking cake with a few simple ingredients in your pantry and kitchen can be fun and satisfying. The most important thing is my cake must be moist, colourful and creative delicious. Let’s get spooky creation going and surprise th kids!!!

2 c plain flour
1 c castor sugar
1/2 c olive oil
300 ml sour cream
250 g strawberries, stems remove and cut into pieces
120 g blueberries
60 ml orange juice
3 eggs, large
1 Tbs baking powder
1 Tsp vanilla extract
1/2 Tsp salt

5 eyes chocolate
2 frogs chocolate
2 strawberries, stem removed and sliced
icing sugar

Preheat oven 170 degrees C. Grease and line 9” spring form. Set aside. Beat sugar and egg well until light and fluffy about 40 seconds. Add sour cream, orange juice, baking powder, vanilla, and salt, beating until well combined. Then add flour and gently mixing in until incorporated. Next add in oil and gives a good mix until batter is smooth about 30-45 seconds.

Add in strawberries and blueberries and mix well again. Spoon batter onto prepared pan. Bake for 45 minutes or until skewer inserted in comes out clean, and cake are golden brown. Cover the cake if it brown too fast with foil. When its done, switch off oven leave cake in with door close for 35 minutes. After that remove from oven cool on rack in pan for 10 minutes and then flip out onto a plate to cool completely.

When the cake is completely cool, place one strawberry slices on top facing you, the second strawberry slices at the bottom near you. Using a fruits cutter equipment, place in the centre of the strawberries slices. Spoon enough icing sugar onto a sieve and shakes it over the cutter to get the design, then using a butter knife to make a few slit on the icing. Next place three eyes chocolate on it. Then one frog and one eye chocolate on the left and right. Serve it with spooky drink, coffee, tea for adult and milk for the kids. Enjoy eating your Halloween spooky cake and watch Hocus pocus!!!
