Minced pork coriander onion and peas

I felt like having minced pork today, and I have frozen peas and two stalks of coriander. I have cooked a big batch so that I can eat it later with my favourite shin ram yun noodles, kwon low mee, or rice.

This is a simple everyday dish that my mom would mostly cook so that we have some food to eat. It’s a dry stir-fry with no sauce to coat the rice, something a bit different. The marinade for the pork is simple. It must have oyster sauce, light soy sauce, and sesame oil, plus other seasonings that I love to change around.

I am just loving minced pork, as it can be added to noodles the next day or even wrapped in rice paper rolls; however, the vegetables for rice paper rolls would vary from dish to dish. But let’s just cook it to go with rice for now, and tomorrow we can add it to either packet noodles or fried eggs. I am glad my dish tastes delicious, and is comforting to eat with just rice. Let’s cook!!!

Ingredients

500 g minced pork
200 gfrozen peas, thawed
2 stalks coriander, cut to bite sized
1 onion, sliced
2-3 Tbs Shoa Xing Chinese cooking wine
1 1/2 Tbs minced garlic
1 Tsp ginger, diced
1-3 Tbs oil
salt
pepper

Pork minced marinade

2 Tsp cornflour
2 Tsp light soy sauce
1 Tbs oyster sauce
1 Tbs mirin (OPT)
1 Tsp ginger powder
2 Tsp sesame oil
1 Tsp chicken stock powder
4 Tbs water

Method

In a large bowl add minced pork, tossing it in the marinade and make sure meat are covered. Let stand at room temperature for about 10-15 minutes.

Heat deep pans on medium high heat and add 1 Tbs oil. When the oil is hot, add garlic, and onion. Cook until fragrant about 25 seconds. Then add 1 Tbs oil again, ginger; stir and cook for 2-3 minutes, until it softens. Add the marinated pork and let brown about 5-8 minutes or until no more pink colour.

Then add 1 Tbs of oil, Shao Xing Chinese cooking wine, peas, and cook about 5-7 minutes. Add coriander, salt and pepper, toss to mix well until pork, and peas are cooked and softened. Check seasoning.

Once minced pork and peas are cooked, spoon it into serving deep plate. Serve with rice and a Guinness stout today. Enjoy the comfort meal!!!!
