Orange butter cake

Another year older for my sister, perhaps Patience, Endurance, and Tolerance is what she needed. No matter what number is your age in this life, a treasure each year or numbers you collected along is the best gift you have. So, my sister put your best and shine to the world: your valuable life that had kept you going. Nobody can take it away from you.

Nobody is perfect, and we need to look beyond the flux of circumstances and discover there are valuable life worth holding onto such as love, Peace, and Joy that we have at no cost. Sisters Love are Gold! Sisters relationship are Diamonds! To hold a diamond, you always need a base of Gold!

I am glad that my sister’s birthday cake turned out well. Even though without much decoration. My sister’s birthday cake is moist, citrus flavourful, beautifully shine with blueberries, mandarins, a chocolate, a candle and glazed with orange marmalade. Glad to hear from my sister that it taste so moist and delicious. Let’s bake a simple cake that shine bright and remember other people need are put first as my valuable life.

Ingredients

250 g butter, softened, chopped
2 Tbs finely grated orange rind
300 ml sour cream
300 g caster sugar
4 eggs
225g self-raising flour
100 g plain flour
125 ml orange juice, from 1 orange and bought orange juice

Garnish

9 blueberries
3 mandarin segments
1 ferrero chocolate
1 candle
marmalade jam

Method

Preheat the oven to 140 degrees C. Grease and line with baking paper 23cm-round cake pan, In a mixing bowl, beat butter, rind and sugar until light and fluffy. Add eggs, one at a time, beating until just combined each addition. Fold sifted flours and juice in two batches. Spoon batter into the prepared pan.

Bake for about 1 hour 10 minutes or until skewer comes out clean. I leave cake in oven for 35 minutes with door close. Time up, remove from oven leave cake in pan for 20 minutes before turning onto a plate to cool completely.

The next day, I spread the cake. Cover the outer sides of the design sheet. Dust some icing sugar. Then remove the design sheet. Cut one strawberry into flower and the other strawberry just take both sides and lay across the design and flower strawberry. Just before cutting lit the candle and place opposite of flower. Serve with coffee, tea or dessert wine. Enjoy!!!!

Note: You can use lemon juice or lime; 60 ml. You can use freshly squeezed orange for juice. You may need less or more time as oven temperature vary. You can garnish with strawberries, or orange and lemon slices or you can make candied citrus slices: 220 g castor sugar, 125 ml water, 1 medium orange and 1 lime , thinly sliced.
