
Felt like having minced pork today and I have carrots. My mom gave me some green beans. I have cooked a big batch so that I can eat it later with my favourite shin ram yun noodles or kwonlow mee.
This is a simple daily dish that mostly my mom would cook it so that we have some food to eat. This is a dry stir fry with no sauce to coat with rice, something different. The marinade of the pork are simple. It a must have oyster sauce, light soy sauce and sesame oil and of course other marinade which I do love to change about.
I am just loving pork minced as it can be added to noodles the next day or even wrap in rice paper rolls however the vegetables for rice paper rolls would vary from many dishes. But let just cook it to go with rice for now and tomorrow can add to either packet noodles or fried eggs. I am glad to have green beans from my mother, now my dish looks colourful, taste delicious and comforting to eat it with just rice. Let’s cook it and enjoy it sitting in front of television watching Harry Porter.
Ingredients
500 g minced pork
2-3 Tbs Shoa Xing Chinese cooking wine
1-2 carrots, cut into matchsticks
8-10 green beans, stems remove and cut about 1” long
1 Tbs minced garlic
1 Tsp ginger, diced
1-2 Tbs oil
salt
pepper
Pork minced marinade
2 Tsp cornflour
1 1/2 Tsp light soy sauce
2 Tbs oyster sauce
1 Tsp ginger powder
2 Tsp sesame oil
1 Tsp chicken stock powder
4 Tbs water
Method
In a large bowl mix the marinade for pork until well combined. Add pork, tossing it in the marinade and make sure meat are covered. Let stand at room temperature for about 10-15 minutes.
Heat deep pan on medium high heat and add 1 Tbs oil. When the oil is hot, add garlic, and fry until fragrant. Then add ginger and stir fry for 1-2 minutes, until it softens. Add the marinated pork and let brown about 4-6 minutes or until no more pink colour.
Then add 1 Tbs of oil, Shao Xing Chinese cooking wine, carrots and beans cook about 8-10 minutes. Add salt and pepper, toss to mix well until pork, carrots and beans are cooked and soft. Check seasoning.
Once minced pork and vegetables are cooked, spoon it into an oval deep plate. Serve with rice and a beer today. Enjoy the comfort meal!!!!
