Shin ram yun noodle with mixed vegetables

Meal for one

Here’s again eating my favourite noodle, Shim ram yun. My sister got me a box of 30 packets from Costco. I have been waiting for my sister to deliver to me. So, here’s my lunch simple cook mixed vegetables to go with noodle.

Google: “Mixed vegetables refer to ready to use combination of cut vegetables. The vegetables may be chopped, sliced, cubed or in juliennes. The typical vegetables included in mixed vegetable are cauliflower, carrots, cabbage, French beans and peas.”

I am using cauliflower, carrots green beans and canned straw mushrooms. Cook them with minced garlic, oil, oyster sauce, soy sauce and same oil. Of course, seasoning: salt and pepper. My noodle is colourful and comforting delicious. Let’s cook!!

Ingredients

1 packet Shin ram yun

Vegetables and sauces – 4-6 people

3 carrots, cut into match stick
1/2 cauliflower, cut into floret
8 green beans, cut to bite size
1 canned straw mushroom
1/4 c vegetables stock
1 Tbs garlic minced
1 Tbs oil
2-3 Tbs oyster sauce
1 Tbs soy sauce
2 Tsp sesame oil
salt
pepper

Method

Heat a saucepan with oil on high and add garlic cook for about 30 seconds. Then add in carrots, toss around for 2 minutes. Next add cauliflower, cook for about 3 minutes until slightly soft. Now add in green bean and cook further about 3 minutes. Next add in straw mushroom, oyster sauce, soy sauce, sesame oil and vegetables stock. Cook tossing salt and pepper and making sure mixing well to combined them until all vegetables are cooked and sauces with stock have combined. Spoon it on to a plate.

Meantime, heat a pot with enough water, bring it to boil. Add Shin ram yun noodle and the condiments. Cook until noodle is softened. Switch off hobs and spoon it onto pasta plate or deep bowl. Then spoon some cooked mixed vegetables over the noodle soup. Gently toss and spread them up. Serve with a glass of white wine. Enjoy!!!!

Note: The remaining mixed vegetables can be served with rice. Or when it has cooled down. Freeze it in freezer or in fridge for a few days.
