Apple matcha vanilla cake

I was invited to a friend house for lunch and she told me don’t bring anything just bring yourself. I told her I can’t go empty handed, then she said just buy me a box of chocolate will do. I said let me bring a cake as I am interested in sharing my creative idea in baking cake. She agreed with me bringing her a cake.

I took a trip down to a new supermarket with the intention of buying different weird creative equipment which I have seen Masterchef people using. Instead, I came back with apple only. Couldn’t find the spray and chiller things. Thought I have not done apple cake for a while. Then what combination to add with apples, I found matcha powder and vanilla grinder at the back of my pantry.

This cake has salted caramel taste combined with earthy tea with sweet nuttiness, and some crunchy from apples and vanilla grinder.  It’s moist and a great way to end savoury meal with. My friends and I enjoyed this cake with a big smile and a cup of matcha tea. Let’s bake!!!


200 g self raising flour
1/4 Tsp baking powder
1/4 Tsp salt
250 g butter
250 g castor sugar
4 large eggs
3 apples, thinly slice, divided
1 1/2 Tsp salted caramel vanilla essence
300 ml double cream
50 g yoghurt

Preheat 170 degrees C. Grease and line 23 cm round springform. Mix together flour, baking powder and salt. Beat butter until it becomes very creamy about 2 minutes. Gradually add 1 big ladle sugar each time and continue beating well for 4 minutes; all the sugar until fluffy and light. Reduce speed to low add egg 1 at a time beating well each addition and remember scrapping down the sides. Next add salted caramel vanilla essence followed by double cream.

Then add flour mixture alternate with yoghurt. Scrapping sides at all time. Line apple slices in a circle in prepared pan and sprinkle matcha over apple slices. Spoon some batter onto the top of apple slices. Smooth the top, add some more apple in circle and in the middle. Grind vanilla grinder all over the apple slices. Next last remaining batter and gently press in the remaining ppl slices, and gently press apple slices into the batter. Then sprinkle matcha powder on top. Gives a couple of knocks on the benchtop.

Bake for 70 minutes or until skewer out clean. Leave in oven with door close for 45 minutes, then remove from oven to cool in pan for 1 hour. Transfer to cake plate mat to cool completely. When cake has cooled completely, sprinkle a bit more matcha over the top. Enjoy with a cup of matcha tea!!!!
