
Bought bitter gourd on sale and my mom had given me some of her egg white. Addition to my mom egg white I had added 2 eggs. Luckily, I have some minced pork and bought broccoli. Just my simple dinner of meat and green. Got to have my chili sauce.

Ingredients
Bitter gourd egg
1 bitter gourd, cut lengthwise, remove the seeds
2 whole eggs
6 white eggs
2 Tbs minced garlic
1 vegetable cube stock
3 Tbs hot water
1 Tsp light soy sauce
1 Tsp Shao Xing Chinese wine

Broccoli minced pork
250 g minced pork
1 big broccoli, florets
1 Tbs dark soy sauce
1 Tsp oyster sauce
1 Tsp light soy sauce
1 Tbs minced garlic
1 Tbs mirin or apple juice

Method
Bitter gourd egg
Slice thinly into about 2 mm slices or to your desired thickness. Place in a bowl. To reduce the bitterness, sprinkle the slices all over with salt. Rub the salt into the gourd slices, or toss several times to distribute the salt. Leave aside for 15 minutes. Drain the juices. Rinse a few times to rid the slices of excess salt. Drain and set aside.
Dissolve vegetable cube stock in hot water. Next crack whole eggs into the bowl with white eggs, beat lightly and season with light soy sauce, Shao Xing Chinese wine, 1 Tsp oil and pepper. Heat saucepan on medium heat. When saucepan is hot, add oil. Swirl around the saucepan and when oil is hot add garlic minced and cook until fragrant about 15 seconds.
Add the gourd slices, and stir fry for about 2 minutes or until the slices start to soften and turn a bit soft. Add the vegetable stock water, and toss around about 1 minutes to combine well. Increase the heat to high. Add the lightly beaten eggs, and cook till they are scrambled. Turn off the heat. Transfer to a serving dish.
Broccoli minced pork
Heat 2 Tbs oil in a sauce pan on medium heat. Add garlic toss around until fragrant about 30 seconds. Then add the minced pork, season with salt and pepper, cook until browned. Transfer to a plate line with paper towel and set aside.
Add another 2 Tbs oil, turn heat up medium high, add broccoli stems, stir, cook until tender. Next add broccoli florets. Stir, cook until the tender. Removed to a plate. Add soy sauce, mirin, dark soy sauce, light soy sauce, oyster sauce, and stir to combine. Add back minced and toss to mixed well with the sauce for 2-4 minutes. Spoon some minced pork onto a serving bowl followed by broccoli and then the remaining minced pork on top.
Assemble
Spoon some rice in a small bowl, gently press down; then flip over onto a blue bowl in the center. Spoon broccoli minced pork place over the top of the rice in a circle. Followed by bitter gourd egg at the bottom of rice in a circle. Squirt Sriracha on top of rice. Enjoy with a glass of white wine!!!
