Berries coffee yoghurt cake

Make this cake for my nephew birthday. Another year older and wise. Using the leftovers blueberries and strawberries and yoghurt that will be expired in one day time. I have also added three packets of mocha coffee and instant coffee to it.

This is a trial and error experiment and also trying it using a bundt pan instead of springform. I am glad that it turned out flavourful with coffee and it’s a great combination with berries and yoghurt. I know presentation is not very good. But the taste is delicious. Let’s bake!!!

Ingredients

400 g yoghurt
290 g Self raising cake flour
250 g granulated sugar
250 g strawberries, sliced
170 g butter, softened, extra to grease bundt pan
125 g blueberries
3 eggs
3 packets of mocha coffee, bought
3-4 Tbs instant coffee
2 Tsp baking powder
1 1/2 Tsp Vanilla extract
1/2 Tsp bicarb soda
1/2 Tsp salt
icing sugar, (OPT)

Garnish

6 strawberries, 4 cut into flower shapes, 2 slices
6 blueberries
icing sugar
plum jam to spread on top

Method

Preheat oven 180 degrees C. Grease well bundt pan. Mix well all the dry ingredients together and set aside. Beat butter and sugar until light and fluffy for about 5 minutes. Add eggs one at a time beating well each addition, the last egg adds with 1 Tbs of flour mixture. Then add vanilla and mix to incorporated.

Add yoghurt and mix well to combined until smooth. Now add flour mixture with a metal spoon. Scrapping the sides of bowl and bottom making sure flour is incorporated.

Place some sliced strawberries at the bottom all-around of greased bundt and spoon some batter over the strawberries layer. Next add some more strawberries and add half blueberries in between strawberries.

Followed by some more batter on top. Smooth the batter and add the remaining strawberries and blueberries gently push in. Then dust some icing sugar over the top. Gives a couple of taps. Bake for 50-55 minutes or until skewer out clean. Switch off oven and leave cake in with door close for one hour.

Remove from oven and let cool in rack for about 35 minutes. Then turn over onto plate and let it cool completely. When cake had cooled completely, spread plum jam over the top of cake. Decorate with strawberries flowers around the top, blueberries across each other on one end and in between flowers and slices strawberries on the opposite end as blueberries. Dust some icing sugar over the fruits and cake. Serve with coffee or dessert wine. Enjoy!!!

Note: Oven temperature may vary. You might need less or more time. You can just use instant coffee only. Or you can use brewed coffee 1 cup. You can use any fruits of your choice. You can omit dusting icing sugar on top of cake and just bake the cake.
