Sharing the magic of Christmas
Make Christmas and summer with this simple but big on taste dessert. A chilled colourful tasty dessert in a glass with something delectable for everyone, will delight family and provide the ideal finish to a perfect Christmas celebration.
Since my last Panettone blueberry and chocolate pudding. This is tryout for one; no bake pudding and egg just yoghurt, treacle, pureed pumpkin, leftover panettone and apple with spices. Tested and tasted delicious for Christmas festive.
Every layer has different taste. I start off with pudding soak in plum liqueur, followed by diced apple with sprinkle cinnamon, then pumpkin pureed yoghurt, pumpkin with spices. Garnish with some diced apple and roughly pounded honey and nuts shard with shredded coconut. My chill pudding is healthy, layered, beautiful and delicious. Let make bigger batch for Christmas surprise treat!!!
Ingredients
8 pieces panettone
2-3 Tbs plum liqueur
6 Tbs yoghurt
8 cooked bite size pumpkin, plus 2 Tbs yoghurt and 1 Tbs water (OPT)
1/2 apple, diced, divide
1 Tsp cinnamon
1/4 Tsp nutmeg powder
1/4 Tsp garlic powder
a pinch of paprika powder
a small piece of nuts and honey shard, roughly pounded
cinamon
shredded coconut
Method
Put panettone in a shallow plate and soak it with plum liqueur. Put pumpkin, 2 Tbs yoghurt and 1 Tbs water in Nutri Bullet blender, puree it to smooth texture; make about 1/2 c. Pour into an oven proof jug. Set aside. In a bowl add yoghurt, treacle, 5 Tbs pumpkin puree and mix together. Set aside.
Use mortar and pestle pound roughly honey nuts shard. Add cinnamon, nutmeg, garlic and paprika into pureed pumpkin and mix well. Put panettone in one layer, followed by 1/4 diced apple with sprinkle cinamon and next yoghurt pumpkin. Then pureed pumpkin followed by the remaining diced apple, roughly pounded nuts and garnish with shredded coconut. Enjoy!!!!
